This is one of the newest breakfast dishes becoming more popular in San Francisco. It is made with all your favorite foods for breakfast, like cheese, eggs and bacon. But the taco shell is a pancake!

Serving Size: 8 Servings

Preparation Time: 45 minutes

Ingredients:

  • 8 pancakes, premade
  • 8 cheddar cheese slices
  • 8 strips of bacon, lean
  • 1 tbsp. of butter, unsalted
  • 6 whisked eggs, large
  • Salt, kosher
  • Pepper, black, ground
  • 1 cup of feta cheese crumbles
  • 4 sliced scallions
  • Optional, to serve: hot sauce

Instructions:

1. Preheat oven to 375F.

2. Place pancakes on cookie sheets lined with baking paper. Top with cheddar cheese slices.

3. Place bacon on cookie sheet lined with foil. Bake till crisp, about 15-18 minutes. At five minutes left to bake, place pancakes in oven, so cheese can melt.

4. Heat butter in skillet on med. heat. Add whisked eggs. Scramble the eggs for three to four minutes. Then season as desired.

5. Fill pancakes with one scoop each of scrambled eggs and a half-cut piece of lean bacon. Use scallions, feta and hot sauce, if desired, for garnishing. Serve promptly.

2 Caramel Apple-Style French Toast

Choosing honey crisp apples will be a good start to making this breakfast a success. Crisp, tart apples work best dont use red delicious or other soft, sweet apples, as they get way too mushy.

Serving Size: 3-6 Servings

Preparation Time: 1 hour 25 minutes + 8 hours refrigeration time

Ingredients:

  • 1 loaf of bread, French
  • 6 eggs, large
  • 1 1/2 cups of milk, low fat
  • 1/3 cup of sugar, granulated
  • 1 tbsp. of vanilla, pure
  • 6 peeled, then cored sliced apples tart apples work better
  • Brown sugar, nutmeg, cinnamon and granulated sugar, as desired

Instructions:

1. Cut the bread in three-inch wide slices. Arrange them in 13x9 pan sprayed with non-stick spray.

2. Beat milk, vanilla, eggs and sugar together in large sized bowl. Pour the mixture over the sliced bread.

3. Arrange the apples atop bread slices. Sprinkle with brown sugar, granulated sugar, cinnamon and nutmeg on top of apples. Cover. Place in the refrigerator overnight.

4. The next morning, bake the pan for an hour in 350F oven till golden brown in color.

5. Top with your choice of caramel topping. Serve.

Serving Size: 14 Muffins

Preparation Time: 40 minutes

Ingredients:

For muffins

  • 2 cups of flour, all-purpose
  • 1/2 cup of sugar, granulated
  • 1/4 cup of brown sugar, packed lightly
  • 2 tsp. of baking powder
  • 1/2 tsp. of cinnamon, ground
  • 1/2 tsp. of salt, kosher
  • 1 cup of milk, whole
  • 2 tbsp. of espresso powder, instant
  • 4 tbsp. of melted butter, unsalted
  • 1 egg, large
  • 1 tsp. of vanilla, pure
  • 1 cup of chocolate chips, mini or regular size

For topping

  • 1/4 cup of brown sugar, packed
  • 1/4 cup of flour, all-purpose
  • 1/4 tsp. of cinnamon, ground
  • 1/4 tsp. of salt, kosher
  • 4 tbsp. of cold, cubed butter, unsalted

Instructions:

1. Combine the sugar, flour, cinnamon, salt and baking powder.

2. Heat the milk in your microwave for 1 minute. Combine the espresso powder and milk till the granules dissolve. Add egg, vanilla and butter.

3. Stir the wet ingredients into the dry till barely moistened, then add the chocolate chips.
