So, youve seen that mulberries are special and worth a shot, right?

But - what can you make with mulberries?

There are LOTS of ideas:

  • Bake them with other fruits or rhubarb into tasty tarts or mini tarts (tartlets).
  • Use them for a topping on summer salads.
  • Use them for soups, especially cold soups.
  • Make them into delicious jams, jellies and preserves, or even chutney!
  • Put then in your trail mix or granola.
  • Put them in muffins and pancakes.
  • Make drinks, with alcohol and without, with mulberries.
  • Use them instead of cranberries for tasty casseroles.
  • Use them in pies or with protein in pot pies.

Be sure you throw out berries that are crushed or moldy if youre storing fresh mulberries. You can refrigerate mulberries in sealed plastic containers for several days. If youd like to freeze the berries, wash the mulberries right after you pick them. Pat them dry before freezing. Read on and see what recipes you find the most tempting. Try one soon!

You can make some delicious breakfasts with mulberries. Here are a few you might want to try

1 Mulberry Pancakes

These juicy and sometimes messy berries work wonderfully in pancakes. Pick extra, too, so you have some to garnish with.

Makes: 4 Servings

Cooking + Prep Time: 55 minutes

Ingredients:

  • 1 & 1/4 cups of flour, all-purpose
  • 4 tsp. of sugar, granulated
  • 4 tsp. of baking powder
  • 1 tsp. of salt, coarse
  • 2 lightly beaten eggs, large
  • 5 tbsp. of melted butter, unsalted + extra softened butter to serve
  • 1 cup of milk, whole
  • To cook: oil, vegetable
  • 2 cups of mulberries + extra for garnishing
  • To serve: maple syrup, pure

Instructions:

1. Whisk the sugar, flour, salt and baking powder together in medium sized bowl and set it aside.

2. Whisk melted butter and eggs together in a separate medium sized bowl. Add milk gradually. Whisk till combined well. Pour egg mixture into flour mixture. Whisk till barely combined.

3. Heat skillet on med-high till hot. Dont allow it to get hot enough to smoke. Use oil to lightly brush. Reduce the heat down to med.

4. Ladle 2 tbsp. of batter into the skillet. Place a few mulberries in the pancake. Cook till you see bubbles on pancake edges, about one to one and a half minutes. Flip. Cool till pancake is set and the bottom has browned lightly, about one and one half more minutes. You can adjust the heat if you need to do so.

5. Repeat these steps with the rest of the batter. You can cook three or four pancakes at once. Keep cooked pancakes fairly warm in 200F oven. Drizzle with butter and syrup and use more mulberries to garnish. Serve.

2 Mulberry & Date Porridge

This soaked porridge was inspired from the trees we see everywhere, brimming with fruit. The berries also go well in muesli and smoothie bowls.

Makes: 1 Serving

Cooking + Prep Time: 20 minutes + 2 to 8 hours chilling time

Ingredients:

  • 1 cup of non-dairy milk, almond
  • 1/2 cup of rolled oats, gluten free if you have them
  • 2/3 cup of mulberries, fresh
  • 1/4 cup of cashews soak for 1/2 hour or longer, till they are softened
  • 1 to 2 pitted dates
  • 1 tbsp. of ground flaxseed
  • 1 tsp. of ground cinnamon
  • 1 dash salt, sea
  • Maple syrup or honey, pure
  • Mulberries, dried

Instructions:

1. Soak the cashews for 1/2 hour or longer, till they have softened.

2. Blend the cashews with flax seed and almond milk. Add 1/3 cup of fresh mulberries and blend till you have a smooth texture.

3. Combine remainder of ingredients in medium bowl. Stir in last 1/3 cup of fresh mulberries. Place in refrigerator for two hours minimum. Overnight is better.

4. Use honey, cinnamon and dried mulberries to garnish. Serve while chilled or leave it set out and allow to warm a bit before serving.

5. If you make this recipe ahead of time, just make it in a plastic container with a lid. Store it overnight in the refrigerator. Remove it next morning and its ready to eat.

3 Mulberry Muffins

Mulberry muffins taste great and have less fat and fewer calories, compared to other types of muffins. They are an easy way to use up extra berries.

Makes: 8 Servings

Cooking + Prep Time: 50 minutes

Ingredients:

  • 1 & 1/2 cups of flour, all-purpose
  • 1/2 cup of sugar, granulated
  • 1/2 tsp. of baking soda
  • 1 tsp. of baking powder
  • 1/2 cup of sour cream, fat free
  • 1 pinch of salt, kosher
  • 1/4 cup of milk, skim
  • 2 tbsp. of applesauce
  • 1 egg, large
  • 1/2 tsp. of almond extract, pure
  • 1/2 cup of mulberries, fresh or frozen & thawed

Instructions:

1. Preheat the oven to 400F. Line six extra-large muffin cups with paper liners or grease them.

2. Combine the sugar, flour, baking soda, baking powder and kosher salt together. Mix sour cream, applesauce, milk, almond extract and egg together in a medium-sized bowl.

3. Add and stir the flour mixture into the applesauce batter till it has a smooth texture. Fold in the mulberries, then spoon the batter into the prepared extra-large muffin cups.

4. Bake at 400F for 25-30 minutes. Toothpick inserted in middle of muffin should come back clean. Remove from the oven. Serve.
