Sausage, hash browns, and eggs cook together in a Dutch oven over a campfire in this terrific breakfast dish. It makes enough to feed even the hungriest campers.
Makes 8 Servings
Cooking + Prep Time: 45 minutes
Ingredients:
- 2 pounds of sausage, ground
- 8 scrambled eggs, large
- 1 lg. package of hash brown potatoes
- 10 ounces of cheese, shredded
Instructions:
1. Brown sausage in your Dutch oven. Remove the meat and add in the hash browns in the drippings from sausage. Smooth out and spread the sausage back on top.
2. Spread cheese over the sausage. Beat the eggs. Add milk. Pour over mixture. Cover. Cook for 14-20 minutes and serve.
This is a perfect campout dish. You make it up with bacon eggs on your first morning out, and then chow down on leftovers the rest of your hiking trip.
Makes 8 Servings
Cooking + Prep Time: 1 hour 10 minutes
Ingredients:
- 1 lb. of chopped strips, bacon
- 1 x 20-oz. pkg. of hash browns
- 8 eggs, large
- 1/2 cup of half n half
Optional: 1/2 1 tsp. of pepper sauce, hot
- 2 cups of Monterey Jack cheddar cheese shreds
Instructions:
1. Prepare grill or campfire for med. high heat level. Use large wood chips or 30-35 charcoal briquettes.
2. Cook the bacon in Dutch oven over the campfire till it is crisp, while occasionally stirring. Remove and place on layered paper towels to drain. Discard the drippings except for 2 tbsp. in the pan.
3. Press potatoes carefully on bottom of Dutch oven and 1-inch up the sides. In small sized bowl, whisk the half n half, eggs and pepper sauce, if using. Pour mixture over the potatoes and sprinkle them with cheese and cooked bacon.
4. Cover the Dutch oven. When wood chips or charcoal have become covered with a white ash, place the Dutch oven over 16 to 18 briquettes. Place 16 to 18 more briquettes on cover of pan.
5. Cook for 20 to 25 minutes, till cheese melts and eggs set completely. Serve.
These pancakes will tempt your taste buds in the morning, and they are so easy to make. Using a Dutch oven means puffy, airy pancakes, with a unique and wonderful taste.

Cooking + Prep Time: 35 minutes
Ingredients:
- 1 1/2 cups of milk, 2%
- 9 eggs, large
- 1 1/2 cups of flour, all-purpose
- 3/4 tsp. of salt, kosher
- 6 tbsp. of butter, unsalted
- Lemon juice, fresh
- Sugar, powdered
Instructions:
1. Whisk eggs, milk, salt and flour in bowl. Heat the Dutch oven till very hot.
2. Add the butter. Allow it to melt. Pour in the batter. Cook till light brown and fluffy. Sprinkle lemon juice over the top and dust using powdered sugar. Serve.
This Dutch oven breakfast only requires one pot, and its the perfect morning meal for large groups or families. You can customize it with your favorite proteins and vegetables, too.
