Can sushi become an often-used dish in your home recipe repertoire?

Sushi is mysterious to people who have never made it. The servings are relatively small, but, when made properly, they are an unforgettable meal. Each bite should be a source of taste, texture, and color.

The base for most sushi dishes is nori, or dried seaweed, in which sushi is wrapped. Back in the day, it was often scraped from wood in water, like piers and boats. Today, it is farmed and cultivated, just for eating.

Even though you can find California roll sushi in Western sushi restaurants, it doesnt have the same ingredients as they do in Japan. The ingredients in Japanese sushi rolls are selected carefully so that the texture, taste, and colors will complement each other. Cutting your rolls before serving allows your guests to see the artistry inside.

Sushi is made to be eaten with your hands. It started out, after all, as a type of fast food. Eating it with your fingers is acceptable and expected. You can use chopsticks for raw fish slices if you like.

1 Inari Sushi

In this original recipe, the sushi rice will be stuffed inside clever pouches made with fried tofu. It makes a wonderful snack any afternoon or evening.

Makes 12 Servings

Cooking + Prep Time: 55 minutes

Ingredients:

  • 6 fried tofu squares (also called aburaage)
  • 2 tbsp. of flour, all-purpose
  • Salt, kosher, as desired
  • Pepper, fresh-ground, as desired
  • 2 cups of uncooked rice, white
  • 5 cups of water, filtered
  • 1/3 cup of vinegar, rice
  • 2 tbsp. of oil, olive
  • 5 tbsp. of sugar, white
  • 3 tbsp. of soy sauce, reduced sodium

Instructions:

1. Press tofu squares with rolling pin, flattening them. Place the flour in bowl. Toss in tofu. Season as desired.

2. Heat the oil in skillet on med-high. Add the tofu. Cook till golden brown in color, and turn now and then, for four to six minutes. Set tofu aside for cooling.

3. Bring four cups of salted, filtered water to boil in pot. Add the rice. Cover. Reduce the heat level to low. Simmer till rice becomes tender, 15-18 minutes. Remove pot from heat. Fluff rice and drain off excess water. Add and stir vinegar, plus extra salt, if desired, and keep rice warm.

4. Cut tofu squares into halves. Open, making pouches from them.

5. Heat one cup of water in pan on med. heat. Add and stir in the soy sauces and sugar. Add the tofu. Cook till liquid evaporates, 12-15 minutes or so. Remove the pouches. Stuff them with rice and serve.

2 Maki Sushi Rolls

Also called makizushi, these rolls include wrapping rice and fillings in dried seaweed, or nori. You can use whatever fillings appeal the most to you.

Makes 1-3 Servings

Cooking + Prep Time: 50 minutes

Ingredients:

  • 3 1/2 oz. of rice, sushi type
  • 1 sheet of seaweed, nori
  • 2 tbsp. of vinegar, sushi
  • Soy sauce, low sodium
  • Wasabi sauce
  • Ginger, sushi

Optional: roasted sesame seeds, white

Fillings (choose your favorites)

  • Raw, sashimi grade salmon
  • Raw, sashimi grade tuna
  • Cucumber
  • Avocado
  • Prawns
  • Canned tuna and mayonnaise
  • Crab sticks

Instructions:

1. Mix the white rice with sushi vinegar.

2. Lay out prep area with a rolling mat or towel.

3. Place nori sheet on mat. Cover 2/3 of 1 side with sushi rice, about 1/2-inch in height.

4. Add ingredients in single line atop rice, in middle of it. Choose your favorites from fillings. This particular recipe uses salmon and mayo.

5. Begin to roll up ingredients, rolling away from you. Keep roll tight. Moisture from rice will aid in keeping ingredients together.

6. Cut roll into six to eight pieces. Serve with sushi ginger, wasabi and soy sauce.

3 Cream Cheese Sushi

Makes 2 Servings

Cooking + Prep Time: 1 hour 25 minutes

Ingredients:

  • 2 sheets of seaweed, dry (nori)
  • 1 cup of medium grain rice, white, uncooked
  • 1 1/4 cups of water, filtered
  • 1 1/2 tbsp. of vinegar, rice
  • 1 1/2 tbsp. of sugar, white
  • A pinch of salt, kosher
  • 3 oz. thin-strip cut cream cheese, cold
  • 2 tsp. of garlic, crushed
  • 1/2 cup of cashews, crushed
