Native Americans once gathered sap by slashing trunks of maple trees to make maple syrup. The earliest European settlers in the region used those methods at first but then began drilling smaller holes in trees, tapping them to make maple sugar. Sugar was more easily stored at the time than syrup.
New England boasts a boiled dinner that has its roots back in Ireland. Its a single pot meal that includes cabbage, corned beef, turnips, carrots and potatoes. The seasoning includes vinegar, horseradish and mustard. The dish represents the cultural heritage of New England, most notably the heritage of Irish immigrants.
Apples have long played a part in New England cuisine. The soil is often rocky, but they have hot, lengthy summers and crisp days in the fall. This is nearly perfect weather for the orchards of the region. Cod and other fish have also been an important ingredient in the dishes of New England. This is a wonderful dish to serve when you have a house-full of guests. The ingredients can be mixed up the night before, and then the casserole is placed in the oven the next morning.
Makes 6-8 Servings
Cooking + Prep Time: 1 hour 10 minutes + 8 hours chilling time
Ingredients:
- 4 cups of white bread cubes, day-old
- 1 chunk-cut onion, red
- 1 chunk-cut green pepper
- 1 chunk-cut red pepper
- 1 lb. of bacon, lean
- 6 beaten eggs, large
- 2 cups of milk, 2%
- 1/2 tsp. of paprika, sweet
- 1 tsp. of salt, kosher
- 1 tsp. of mustard, prepared
- 1 1/2 cup of cheddar cheese shreds
Instructions:
- Fry bacon till done as you prefer and drain it well.
- Grease 13 x 9 baking dish lightly. Place bread in dish. Top with meat and veggies. Mix milk, eggs, cheese, mustard, salt and paprika together. Pour this mixture over meat and veggies and refrigerate the mixture overnight.
- The next day, preheat oven to 350F. Bake casserole for 45-50 minutes and serve.
This is a wonderful breakfast for cold, snowy days. If you soak your oats overnight in cold water, it cooks up creamier and more quickly.
Makes 4 Servings
Cooking + Prep Time: 1 hour 5 minutes
Ingredients:
- 1 cup of oats, steel-cut
- 4 cups + 1/4 cup of milk, whole
- 1/2 cup of water, filtered
- 1 stick of cinnamon
- 3 tbsp. of brown sugar, dark
- 1 tsp. of vanilla extract, pure
- 1/2 tsp. of salt, kosher
- 2 1/2 oz. of chopped chocolate, dark
- Toppings, like toasted hazel nuts, pumpkin seeds, coconut flakes, etc.
Instructions:
- Rinse oats or leave them to soak overnight.
- Place med. pan on high heat. Add 4 cups of milk, then oats, water cinnamon. Stir well. Bring to boil.
- Reduce heat immediately to low simmer. Leave pan uncovered and cook and stir the oats till they are tender, which will take 40 minutes or so, or only 10 minutes if the oats were soaked overnight. Remove oats from the heat. Discard the cinnamon stick. Add vanilla, salt and brown sugar. Add the chocolate. Stir till it melts.
- Divide oatmeal in four bowls. Add warm milk toppings, as desired. Serve.

Makes 6-8 Servings
Cooking + Prep Time: 25 minutes + chilling time
Ingredients:
- 12 large eggs, hard-boiled
- 1/4 cup of mayonnaise, reduced fat
- 2 tbsp. of vinegar, apple cider
- 2 tbsp. of softened butter
- 1 tbsp. of sugar, granulated
- 1/2 tsp. of pepper, ground
- 1/4 tsp. of salt, kosher
- 1/2 cup of frozen, thawed spinach, chopped, squeezed fully dry
- 4 strips of cooked, crumbled bacon
Instructions:
- Slice the eggs lengthways in halves. Remove the yolks. Set the whites aside. Mash the yolks in small sized bowl.
- Add and stir in the vinegar, mayonnaise and butter, along with sugar, salt and pepper. Add the spinach. Mix well. Add bacon and stir. Spoon into the egg whites and chill before serving.
Start a new breakfast tradition with these cinnamon apple pancakes. They are fluffy and light, with ripe grated apples and cinnamon.
