1. Corn Porridge with Berries
An early morning burst of goodness to fill you up nicely.
Servings: 4
Prep Time: 5 mins
Cook Time: 11 mins
Ingredients:
1 cup fine cornmeal
1 cup soy milk
tsp salt
2 cups water
tsp nutmeg powder
tbsp cinnamon powder + more for garnishing
3 tbsp coconut sugar
tsp vanilla extract
1 cup fresh blueberries and raspberries, hulled
1 tbsp chia seeds for topping
Toasted almonds for topping
Instructions:
1. In medium pot, mix cornmeal, soy milk, salt, and water. Cook over medium heat (uncovered) for 8 to 10 minutes, with occasional stirring until semi-thick porridge forms.
2. Stir in nutmeg, cinnamon, coconut sugar, vanilla, and cool for 1 more minute. Turn heat off.
3. Dish porridge into serving bowls and top with blueberries, raspberries, chia seeds, almonds, and cinnamon. Enjoy!
2. All Seed Bread
Nutrient-packed yet tasty and crunchy, the perfect complement for many drinks.

Prep Time: 10 mins
Cook Time: 45 mins
Ingredients:
For flax egg:
3 tbsp flax seed powder
cup + 1 tbsp water
For bread dough:
Instructions:
1. Preheat oven to 350 F and line a 4 x 7-inch loaf pan with greaseproof paper.
2. For flax egg: combine flax seed powder and water in a small bowl and let sit for 5 minutes or until egg-like in consistency.
3. Meanwhile, in large bowl, mix flour, baking powder, all seeds, and salt.
4. In medium bowl, whisk coconut cream, coconut oil, and flax egg until smooth. Combine both mixtures until smooth batter forms.
5. Pour dough into loaf pan and scatter some poppy seeds on top bake in oven for 45 minutes or until passes toothpick test.
6. Remove pan and transfer bread to a wire rack to cool. Slice and enjoy.
3. Cajun Tofu Scramble
An intelligent way to upgrade tofu scramble with Cajun seasoning and some vegetables.
Servings: 4
Prep Time: 10 mins
Cook Time: 15 mins
Ingredients:
2 tbsp plant butter, for frying
1 (14 oz) pack firm tofu, pressed and crumbled
1 tomato, finely chopped
1 medium red bell pepper, deseeded and chopped
2 tbsp chopped fresh scallions
1 tsp Cajun spice
1 tsp turmeric powder
Salt and black pepper to taste
cup chopped baby spinach
cup grated vegan Parmesan cheese
Instructions:
1. Melt plant butter in a large skillet over medium heat and cook in tofu for 5 to 7 minutes or until light golden, with occasional stirring. Break tofu into bits to resemble scramble egg chunks.
2. Stir in tomato, bell pepper, scallions, Cajun spice, turmeric powder, salt, and black pepper. Saut until vegetables soften, 5 minutes.
3. Mix in spinach to wilt, 3 minutes, and then half of vegan Parmesan cheese. Let melt for 2 to 3 minutes and turn heat off.
