Recipe 1: BBQ Chicken Skillet Pizza
This is a great pizza dish to make if you are craving something on the spicy side. It is insanely delicious and made with a homemade pizza crust, making it the perfect dish to serve during your next pizza night.

Cooking Time: 45 Minutes
List of Ingredients:
- 1 tablespoon of Extra Virgin Olive Oil, extra for brushing
- Pound of Chicken Breasts, boneless, skinless and cut into cubes
- Dash of Salt and Black Pepper
- 1 Pound of Pizza Dough
- 2 Tablespoons of Barbecue Sauce, extra for drizzling
- Cup of Cheddar Cheese, shredded
- Cup of Fontina Cheese, shredded
- of a Red Onion, thinly sliced
- Ranch Dressing, for drizzling
- Chives, fresh, chopped and for garnish

Instructions:
1. First heat up the oven to 525 degrees.
2. Then use a large skillet and place over medium to high heat. Add in the extra virgin olive oil and once the oil is hot enough add in the chicken. Cook for 6 minutes on each side or until the chicken is golden brown in color. Season the chicken with a dash of salt and black pepper.
3. Next brush a large cast iron skillet with olive oil.
4. On a lightly floured surface roll out the pizza dough into a large circle, making sure that it fits inside of the cast iron skillet. Transfer the dough into the cast iron skillet.
5. Leave a half-inch border around the edge of the pizza dough. Add a layer of barbecue sauce to the dough. Top off with the cheddar cheese, fontina cheese, cooked chicken and sliced red onion.
6. Brush the crust of the pizza dough with the extra virgin olive oil. Sprinkle the crust with a dash of salt.
7. Place into the oven to bake for 23 to 25 minutes or until the cheese is fully melted.
8. Drizzle the barbecue sauce and ranch over the cooked pizza. Garnish the pizza with the fresh chives and serve immediately.
Recipe 2: Pizza Zucchini Boats
This is one pizza dish you dont have to feel guilty about eating. These pizza boats are incredibly healthy and absolutely irresistible.
Yield: 8 Servings
Cooking Time: 25 Minutes
List of Ingredients:
- 4 Zucchini, large and cut into halves lengthwise
- 1, 16 Ounce Jar of Marinara Sauce
- 2 Cups of Mozzarella Cheese, shredded
- 1 Cup of Miniature Pepperoni
- Basil, fresh, chopped and for garnish

Instructions:
1. Heat up the oven to 350 degrees. While the oven is heating up score the zucchini and scoop out the insides into a large bowl.
2. Set a large skillet over medium heat. Add in the olive oil and once the oil is hot enough add in the zucchini. Cook for 8 minutes or until tender.
3. Pour in the marinara sauce and toss to mix.
4. Place the hollowed out zucchini shells onto a large baking sheet. Spoon in the sauce mixture. Top off with the mozzarella cheese and miniature pepperoni.
5. Place into the oven to bake for 15 minutes or until the zucchini is tender and the cheese is golden in color.
6. Remove and garnish with the basil before serving.
Recipe 3: Greek Pita Pizzas
You dont have to take a trip to the Mediterranean to enjoy a tasty Greek style pizza. It is great to make whenever you are craving Mediterranean food and pizza.

Cooking Time: 25 Minutes
List of Ingredients:
- 2 Cloves of Garlic, minced
- 2 teaspoons of Rosemary, dried
- 2 teaspoons of Oregano, dried
- 1 tablespoon of Red Wine Vinegar
- 3 Tablespoons of Extra Virgin Olive Oil
- Dash of Salt and Black Pepper
- 1 Cup of Cherry Tomatoes, cut into halve
- Cup of Cucumber, chopped
- 1/3 Cup of Kalamata Olives, cut into halves
- 1 Cup of Mozzarella Cheese, shredded
- Cup of Feta Cheese, crumbled
- 4 Pita Bread

Instructions:
1. Preheat the oven to 350 degrees.
2. While the oven is heating up use a small bowl and add in the minced garlic, dried rosemary, dried oregano, red wine vinegar and extra virgin olive oil. Season with a dash of salt and black pepper. Stir to evenly mix.
3. Then use a medium bowl and add in the tomatoes, chopped cucumber and halved Kalamata olives. Pour in the vinaigrette and toss to mix.
4. Brush the pita breads with the remaining vinaigrette. Top off with the mozzarella cheese and crumbled feta cheese. Spoon the vegetable mixture over the top. Sprinkle the remaining mozzarella cheese over the top.
5. Place into the oven to bake for 15 minutes or until the cheese is melted and the pita bread is golden brown in color. Remove and serve right away.
