In all of my cookbooks Ive celebrated one core principle that you ll see on each and every page and taste in each and every mouthful it s gotta be real! And from day one my mission has been clear: celebrate real food in a way that respects your health and retains the integrity of every ingredient you use. I also believ e that each meal you create should be easy , look fantastic and taste incredible. Flav our should never be compromised when looking after y our health, which is why I lov e doing what I do showing people that health y food is delicious food. Barbecue food, then, is a true representation of what I am about. It doesn t get any more real than cooking outdoors on an open ame, where there is no need to complicate things or trick anything up. It is about honest, simple cooking that celebrates the produce, adds incredible texture and delivers a depth of avour to food that cannot be found elsewhere. The barbecue is an iconic and timeless representation of our early beginnings. Thousands of years ago, our hunter g atherer ancestors used re for safety , sur vival, warmth, cooking and comfor t, and here we are now in the modern day , still using it for the same reasons (albeit in a more conve nient shape). For man y years, I ve believe d in looking to our roots when it comes to nutrition by choosing unrened and unprocessed ingredients and preparing them in a way that reects the best modern learnings to help us thrive. So it s very synergistic that after so many ye ars of talking about the paleo and primal way of cooking and eating this book celebrates cooking outside over an open ame. The ames of a barbecue bring people together, connecting communities and providing a place of warmth and comfort. The barbecue has no borders and doesn t discriminate between race or cultures across the globe it is a place for people to come together , to feed their family and friends, to help celebrate life eve nts. And there is no doubt that, here in Australia, it holds a part icularly special place in the hearts of so many . This book aims to amplify this love of being in our backyards, local parks or down the beach connecting, while also encouraging you to cook in a way that you might ne ver have done before!
The human element of barbecuing is undeniable, but what it does to food is next level. The barbecue brings food aliv e and awake ns all of the senses. This is not about complicating mealtimes I am here to make things simple for y ou. I cove r all the equipment you ll need and explain the different cooking methods over the following pages. Whether you follow a paleo, k eto, low-car b, vegan, vegetarian or pescetarian way of eating or just love barbecuing this book is for you! And because my passion and qualications are in health and nutrition, the food here is incredibly good for you it is all made from scratch using the very best nutrient-dense ingredients. The food also follows the same ethos as my previous cookbooks, being completely free of grains, legumes, gluten and rened sugar . It s also v er y easy to make ev eryt hing in this book dairy free, simply by replacing butter with extra-virgin olive oil. As always, Ive tried to include plenty of plant-based options to ll your plates with colour , vibrancy and goodness. The salads chapter will have you eating the rainbo w, the vegetable recipes are some of my all-time favourites, while the animal proteins span a wide variety of different cuts and celebrate family-friendly ingredients from cuisines all across the globe. More than anything, though, I hope yo u nd joy in the act of cooking real food from this book.
