Introduction
Let us explore together a few staples, must-haves in your kitchen and your refrigerator when its about making some warm salads. You want to be ready at all times, even on a Monday night after a long day at work.
Of course, we do not expect you or anyone else to have at all times fresh fruits and vegetables. We understand that they do perish and you need to limit your purchases in the produce department. However, I personally try to keep at least one bag of prewashed mixed greens. This way, if I do not use it to prepare a salad per say, I can use part of it to dress up sandwiches or tacos. In addition, the basic veggies such as garlic, onions should have a place in your heart and your refrigerator at all times.
In your pantry, however, you should keep more rigid inventory, so when you are feeling like making a yummy warm salad, you can easily make one quick trip to the local produce market and be done.
You should keep some canned tuna or even canned chicken or both. You can also keep canned salmon, but I honestly very rarely use it, I will prefer to bake some fresh salmon and flake it after to add to a salad. In the pantry, you should also always have some nuts (almonds, walnuts, pistachios, pine nuts or any of your favorite). You should also keep a few types of dried fruits, such as dried cranberries, raisons, dates, figs or other.
Additionally, you can add to your stock some fried dried onions, sundried tomatoes, banana peppers, olives and other garnish you would typically top of your salad with.
Finally, in order to dress up your salad, you need some tasty vinaigrettes, and I suggest you keep a few store-bought ones ready to use: ranch, blue cheese, Italian, French or any of your other favorites.

Warm spinach, bacon and hardboiled eggs salad
You can choose to saut the spinach and serve some bacon and eggs on top. You can also prepare the bacon and hard-boiled eggs and place them on a fresh, crisp and cold bed of baby spinach leaves. Either way, you get will the wonderful benefits from the spinach and you can top of it off with the bacon greases warm dressing that suggested below.
Serving Size: 4
Cooking Time: 40 Minutes
Ingredients:
Dressing:
2 Tbsp. Bacon grease
2 tbsp. olive oil
1 tbsp. minced garlic
2 honey mustard
4 Tbsp. while balsamic
Salt, black pepper
Instructions:
1. Start by boiling water and prepare the hardboiled eggs as you normally would.
2. Meanwhile, you should cook the sliced bacon in a skillet on the stovetop.
3. Make sure you rinse under cold water the hardboiled eggs when done and peel them without leaving any shell on. Let the eggs cool off and slice.
4. Next, remove the bacon from the skillet and keep the bacon grease in a glass bowl.
5. In the bowl, add all the ingredients listed for the vinaigrette. Set aside.
6. Divide the baby spinach leaves into 4 portions, on 4 places.
7. Add the equivalent of 1 sliced hardboiled egg on top of each one, a few slices of bacon, and sprinkle some Parmesan cheese and green onions.
8. Finally, warm up for a minute in the microwave the bacon grease dressing and drizzle a generous portion top of each salad.
9. Enjoy on a Saturday night with a glass of wine!
Warm green beans and mushrooms side salad
This is the best salad to make when you can get your hands on fresh green beans. Trim them well and steam them slightly. Use an oily vinaigrette and some additional ingredients such as sauted mushrooms and garlic.

Instructions:
1. Bring water to boil in a large saucepan, add a little salt and oil.
2. Trim the green and yellow beans after washing them carefully.
3. Place them to boil and steam cook for 10 minutes.
4. You want the beans to be crunchy and vibrant. Drain well.
5. In a skillet heat oil and cook the sesame seeds, diced peppers for 3-4 minutes with the garlic.
6. Combine the beans with the other veggies in a large bowl.
