This is my grams collection of her most often made and loved by all muffins. My gram had 8 children and 15 grandkids and as Ive said before, thats a lot of honest judges.
The ten muffin recipes in this book are tried and true and what doesnt get packed in todays lunch freezes well for another day. I hope you enjoy them as much as we all do! As shown in the photo I took of the cookbook above, these handwritten recipes have been handed down through four generations of home baking. From our home to yours, Im sharing our long-standing family favorites transcribed directly from the original handwritten recipe book that my mom received from her mom.
Banana Muffins
Ingredients : 1 cups flour 1 tsp baking soda tsp salt 1 cups white sugar cup softened butter 2 beaten eggs 1 cup of mashed ripened bananas cup of sour milk cup of walnuts and/or chocolate chips (optional) Directions: 1 Preheat oven to 350F. 2 In a large bowl, combine flour, baking soda and salt. 4 Add eggs, bananas and milk, then blend. 5 Stir in walnuts / chocolate chips. 6 Fill well greased muffin tins to the top. 7 Bake at 350F for 30-40min.
Blueberry Muffins
Ingredients: 1 cup flour cup white sugar 3 tsp baking powder tsp salt 1 cup blueberries 1 cup milk cup melted butter 1 egg Directions: 1 Preheat oven to 350F. 2 In a large bowl, combine flour, sugar, baking powder and salt. 3 Gently fold blueberries into dry ingredients. 4 In a smaller bowl, combine egg, milk and butter. 5 Add liquid mixture to dry mixture, and gently stir just until moistened, do not beat. 6 Fill well greased muffin tins a little more than full. 7 Bake at 350F for 20 min.
Blueberry Oat Muffins
Ingredients: 1 cup oatmeal 1 cup sour milk (add 1 tbsp vinegar) 1 cup flour cup brown sugar 1 tsp baking powder tsp baking soda tsp salt 1 egg beaten cup softened butter 1 cup fresh blueberries Directions: 1 Preheat oven to 350F. 2 In a large bowl, combine oats and milk, let it stand for a few minutes. 3 In another bowl combine flour, brown sugar, baking powder, baking soda and salt, mix well. 4 Stir eggs and softened butter into oat mixture. 5 Add oat mixture all at once into dry ingredients, stir just until moistened. 6 Gently fold in blueberries. 7 Fill well greased muffin tins full 8 Bake at 350F for 15 to 20 minutes.
Carrot Pineapple Muffins
Ingredients: 1 cup white sugar 2/3 cup vegetable oil 2 large eggs (beaten) 1 cup flour 2 tsp baking powder 1 tsp baking soda 1 tsp cinnamon tsp salt 1 tsp vanilla extract 1 cup grated carrot 1 cup crushed pineapple Directions: 1 Preheat oven to 375F. 2 In large bowl combine sugar, oil and beaten eggs. 3 In another bowl combine flour, baking powder and soda, cinnamon and salt, mix well. 4 Add dry ingredients to the sugar and oil mixture and stir to moisten. 5 Fold in carrots, pineapple and vanilla extract. 6 Fill well greased muffin tins to top. 7 Bake at 375F for 20 min.
Chocolate Chip Muffins
Ingredients: 1 cups flour cup white sugar 3 tsp baking powder tsp salt 1 cup chocolate chips 1 cup milk 1/3 cup melted butter 1 egg Directions: 1 Preheat oven to 375F. 2 In a large bowl, combine flour, sugar, baking powder and salt. 3 In a smaller bowl, combine egg, milk and butter. 4 Add wet mixture to dry mixture, and gently stir just until moistened, do not beat. 5 Fill well greased muffin tins a little more than full. 6 Bake at 375F for 20 min. 7 Drizzle a few melted chocolate chips on top when cooled.
Cornmeal Muffins
Ingredients: 1 cup flour 1 tbsp baking powder tsp salt cup white sugar 1 cup cornmeal cup butter 1 egg cup milk Directions: 1 Preheat oven to 375F. 2 In a large bowl, combine dry ingredients together. 3 Melt butter, add egg and milk, combine well. 4 Add liquid mixture to dry mixture, gently stir just until moistened 5 Fill well greased muffin tins a little more than full. 6 Bake at 375F for 15-20 min. 6 Bake at 375F for 15-20 min.
Serve warm.
Doubley Chocolatey Muffins
Ingredients: 2 cups flour 1 cup white sugar cup chocolate chips or chocolate chunks cup unsweetened cocoa powder 1 tsp baking soda 1 tsp vanilla extract extract 1 egg 1 cup plain yogurt cup milk cup vegetable oil cup chocolate chips Directions: 1 Preheat oven to 400 F. 2 Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder, and baking soda in a large bowl. 3 Whisk egg, yogurt, milk, and vegetable oil in another bowl until smooth. 4 Pour into chocolate mixture and stir until batter is just blended. 6 Bake at 400F for 20 minutes.
Honey-Carrot-Date Muffins
Ingredients: cup butter cup honey cup milk 2 eggs 1 cups flour 1 tsp baking powder 1 tsp salt 1 cup grated carrots 1 cup chopped dates Directions: 1 Preheat oven to 375F. 2 In large bowl combine melted butter and honey. 3 Stir in milk and eggs then beat. 4 In another bowl combine flour, baking powder and salt, mix well. 5 Add dry ingredients honey/egg mixture and stir just to moisten. 6 Fold in carrots and dates. 7 Fill well greased muffin tins to top. 8 Bake at 375F for 15-20 min.
Maple Syrup Muffins
Ingredients: cup softened butter cup white sugar 1 tsp salt 1 cup flour 2 tsp baking powder cup oatmeal cup of milk cup maple syrup Directions: 1 Preheat oven to 350F. 2 In a large bowl, combine butter with sugar and salt. 3 Add flour and baking powder, then blend with a fork until crumbly. 4 Mix in oatmeal. 5 Blend milk and syrup together then pour over dry ingredients, stir only to moisten. 6 Fill well greased muffin tins a little more than full. 7 Bake 350F for 20 min.
Morning Glory Muffins
Ingredients: 2 cups flour 1 cups white sugar 2 tsp baking soda 2 tsp cinnamon tsp salt 2 cups grated carrot cup raisins cup nuts cup coconut 1 apple peeled, cored and grated 3 eggs cup oil 2 tsp vanilla extract Directions: 1 Preheat oven to 350F. 2 In a large bowl combine flour, sugar, baking soda, cinnamon & salt. 3 In another bowl, combine carrots, raisins, nuts, coconut and apple. 4 Add the carrot mixture to the dry ingredients and mix. 5 In a small bowl, beat eggs, add oil and vanilla extract. 6 Gently add egg mixture to the rest of the ingredients. 7 Fill well greased muffin tins filling to the top. 8 Bake at 350F for 20 min.
*BONUS* Orange Chocolate Muffins
Ingredients: cup softened butter 1 cup white sugar grated peels of 2 oranges 2 large eggs cup sour cream cup fresh orange juice 1 tsp baking powder tsp baking soda 2 cups flour 3 oz sweet chocolate (chopped fine) Directions: 1 Preheat oven to 350F. 2 Beat butter and sugar together until fluffy, continue beating, add orange peel then one egg at a time. 3 Blend in sour cream and orange juice. 4 Fold in dry ingredients and chocolate just until moistened do not blend. 5 Fill well greased muffin tins to top. 6 Bake at 350F for 20 minutes.
