Recipe 1 - Muffin-Pan Fried Rice Cups
Serve these at your special occasion and watch them disappear in a go!
Cooking Time: 1 hour 5 minutes
Serving Size: 12
Ingredients:
Lightly beaten eggs 3
Hoisin sauce 2 tablespoons
Drained corn kernels 2 cups
Frozen peas 1/2 cup
Wonton wrappers, square 12
Shortcut turkey bacon rashers (finely chopped, trimmed) 2
Brown onion, small (finely chopped) 1
Olive oil (extra-virgin) 2 teaspoons
Brown rice 1 cup
Instructions:
Cook the rice following the method of absorption on their package. Transfer them to a bowl (heat-proof).
Meanwhile, heat the oil in the frypan over the medium flame. Add the onion. Cook for about 5 minutes until the color turns golden. Add the mixture to the rice. Put them aside for about 10 minutes to let them cool down.
To 425F (fan-forced), preheat the oven. Grease a muffin pan (12-hole). Line the holes using the wonton wrappers.
Add the egg, hoisin sauce, corn, turkey rashers, and peas to the rice mixture. Season with pepper. Stir well to combine properly. Spoon the mixture into the already prepared pan hole, then press for compacting. Bake for about 20 minutes until the color turns golden and firm enough to handle easily.
Let stand in the pan for almost 10 minutes. Use a buttered knife, and carefully lift the cups out of the pan, and then transfer them to the wire racks to let them cool down completely. Wrap them in the plastic individually once turned cold.
Recipe 2 - Strawberry Scone Cakes

Ingredients:
Extra strawberries, halved 2 and 1/2 cups
Extra vanilla bean extract 1/2 teaspoon
The mixture of icing sugar 1 tablespoon
Thickened cream 1 and 1/2 cups
Coles brand egg, Australian free-range (whisked lightly) 1
Hulled strawberries, chopped 1/3 cups
Buttermilk 2/3 cup
Extract of vanilla bean 1 teaspoon
Caster sugar 1/3 cup
Baking powder 1 and 1/2 teaspoons
Flour, self-raising 2 cups
Chilled butter, chopped 1 and 1/3 cups
Instructions:
At 425F, preheat the oven. Grease a 1/3 cup 12-hole muffin cup.
Take a food processor and process the vanilla, caster sugar, baking powder, flour, and butter until the mixture starts to resemble coarse crumbs. Transfer the mixture to a bowl.
Use a knife (round-bladed) to stir in the chopped strawberries and buttermilk until their mixture comes together. Lightly flour a surface and put the dough on it. Knead the dough two to three times.
Roll the mixture into twelve balls and put all the balls in each of their respective holes. Slightly press to flatten them. Brush with the egg. Bake them for about 10 minutes until their color turns golden, and they have risen. Let stand for 2 minutes. Transfer to the wire rack to let cool down completely.
Whisk the extra extract of vanilla bean, cream, and icing sugar until the soft peaks are formed.
Top the cakes using strawberries and whipped cream.
Recipe 3 - Muffin-Tin Lasagnas

Pasta sauce (garden-style) 3 cups
Wonton wrappers 24
Olive oil 1 tablespoon
Blend of shredded Italian cheese, divided into 2 cups
Ricotta cheese (part-skim) 2 cups
Lightly beaten egg, large 1
Instructions:
At 375F, preheat the oven. Take a bowl, mix 1 and 1/4 cups of the blend of Italian Cheese, egg, and Ricotta Cheese.
