my

second

cookbook.

It

is

full

of

recipes

for

stuff

that

I

like

to

cook

for

my

family

and

friends.

That

hasnt

changed.

For

me

deliciousness

should

always

be

paramount

and

I

still

feel

it

should

be

achieved

as

simply

as

possible,

using

ingredients

that

are

easily

found

in

your

local

supermarket

and

with

equipment

that

is

found

in

most

Aussie

homes.

There

are

no

waterbaths,

$2000

mixers

and

blast

chillers

needed

here!

Sometimes,

however,

you

might

find

yourself

reaching

for

a

can

or

going

to

the

freezer

because

so

many

of

the

recipes

take

very

commonplace

ingredients

and

then

twist

them

up

into

something

rather

exciting.

The

very

elegant

tinned

peach

souffl

on

is

a

great

example

of

that!

This

second

cookbook

is

a

wee

bit

different

from

my

first.

It

has

a

much

longer

title

than

Matt

Prestons

Best

Recipes,

for

starters.

Oh,

and

the

work

shirt

Im

wearing

on

the

cover

is

green,

not

blue.

The

food

is

a

wee

bit

different

too

fresher,

lighter,

healthier

and

with

many

more

Asian

flavours.

Youll

find

heaps

of

vibrant

summer

salads

loaded

with

pep,

punch

and

crispiness;

crunchy

dishes

that

eat

light

but

are

so

jam-packed

with

flavour

they

taste

like

they

should

be

bad

for

you

(but

arent);

and

other

simple

and

more

responsible

alternatives

to

my

bad

ways

of

the

past.

Oh

and

many

more

vegetarian

dishes

not

that

youll

notice.

These

recipes

are

meat-free

because

they

dont

need

it

to

make

them

delicious.

You

wont

miss

it.

This

is

vegetarianism

by

stealth.

Rest

assured

there

is

also

some

seriously

carnivorous

stuff

too.

Thats

why

this

book

is

so

much

bigger

than

the

last

one!

Fresher,

healthier

and

more

delicious

recipes;

well,

that

was

the

idea

and

then

it

all

went

wrong...

I

suggested

a

section

full

of

those

really

naughty

over-the-top

dishes

that

I

love

to

cook

for

friends

as

a

treat.

These

went

into

the

sealed

section

because,

like

a

Bangkok

nightclub

act,

they

are

just

a

little

too

full-on

for

the

delicate

stomachs

of

some

people

and,

like

a

night

out

with

a

top

netball

team,

they

should

be

limited

to

a

once-a-year

indulgence

for

the

good

of

your

health.

That

section

is

sealed

for

your

own

safety.

Please

resist

opening

it

if

you

are

a

helpless

slave

to

your

passions.

The

trouble

is

that

once

the

sealed

section

got

filled

up,

this

salaciously

finger-licking

decadence

overflowed,

threatening

to

overwhelm

my

best

intentions

to

eat

light,

eat

fresh.

Sure,

theres

still

a

lovely

vibrant

dish

of

pineapple

with

black

pepper,

no-churn

ice

creams

made

with
