Appetizer Recipes

(1) Fried Calamari
Yield: 6
Preparation Time: 10 minutes
Cooking Time: 2 minutes
Ingredient List:

Methods:
Wash the squid thoroughly and salt and pepper the pieces.
Combine the flour and crushed red pepper in a paper bag with the squid.
Shake to coat and set aside.
Heat the oil in your skillet until it is very hot.
Saut the garlic for 30 seconds then, add the calamari and fry for 1 minute 30 seconds. Do not over-fry.
Serve with Sriracha sauce as a dip.
(2) Artichoke Bruschetta
Yield: 2
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Ingredient List:
8 artichoke hearts in oil, finely sliced
Salt and pepper to taste
Extra-virgin olive oil
2 slices Italian bread
1 clove garlic, peeled
1/2 teaspoons parsley, chopped

Methods:
In a bowl, mix artichoke hearts, salt, pepper and a few drops of olive oil.
Toast bread. While bread is hot, rub each slice with garlic.
Spread artichoke sauce on the bread and sprinkle with parsley.
Serve while hot.
(3) Stuffed Mushrooms

Preparation Time: 10 minutes
Cooking Time: 20 Minutes
Ingredient List:
Cooking spray
12 large white stuffing mushrooms, cleaned and stems removed and reserved
2 garlic cloves, finely chopped
2 tablespoons chopped fresh parsley
4 tablespoons olive oil
cup bread crumbs, plus extra for topping
cup grated Parmesan cheese, plus extra for topping
Salt to taste

Methods:
Preheat the oven to 400F.
Spray a baking sheet with cooking spray.
Finely chop the mushroom stems and place them in a mixing bowl.
Add the garlic, parsley, oil, bread crumbs, Parmesan cheese, and salt.
Mix all the ingredients well. The mixture should be moist, so add another drizzle of oil if needed.
Salt the inside of the mushroom caps and stuff the caps with the stuffing.
Place the mushroom caps on the baking sheet and sprinkle the tops with a pinch of bread crumbs and Parmesan cheese. Bake for 20 minutes.
(4) Zucchini Boats

4 medium zucchinis
3 pork sausages, casings removed
cup bread crumbs
cup shredded mozzarella
cup freshly grated Parmesan or Grana Padano cheese, plus more for topping
