Introduction

1) Carrot Samosa
Carrot samosa is a very good substitute for another samos a . It is sweet, nutritious and full of arom a .
Ingredient List:

- 1 cup Carrots ( dice d )
- 1 cup Green peas
- 2 tbsp. Green and fresh chili
- tbsp. Amchur powder
- tbsp. Turmeric powder
- tbsp. Masala
- tbsp. Mint
- tbsp. Salt
- 1 Bread
Samosa pastry Ingredient List:
- 4 cups All-purpose flour
- tbsp. Salt
- 1 cup Wate r/ milk
- 2 Eggs
- 1 tbsp. Oil

Directions:
. Boil peas and carrot s . Leave them to boi l .
. Take flour, milk, eggs, oil and salt and mix them in a bow l . Knead well to make a soft and smooth doug h .
. Cover the dough and set it aside for 15 to 20 minute s .
. On a pan, heat some oil s . Put all the filling Ingredient List: and stir them wel l . Allow them to cook for 3 to 5 minute s .
. Take the boiled carrots and mash the m . Put them in the mixture and sti r .
. Put the boiled peas in the mixture and sti r . Cook for 2 minute s .
. Switch off the fire and set it aside to cool dow n .
. Take the dough and cut it to piece s . Roll the pieces to circular shape s . Cut the shapes into halve s .
. Using your finger, roll the pieces to make cone shape s . Use a spoon to fill the cones with the filling s .
1. Make sure you seal the edges of the samosa with wate r .
1. Deep fry the samosas until they are crispy and lightly brow n .
1. Remove them and drai n- dry them with a kitchen towe l .
1. Serve them ho t .
2) Potato and Chickpea Samosas
Have your potatoes and chickpea ready and you will surely enjoy this recip e . It is delicious and easy to coo k .
Ingredient List:
- 3 cups Mashed potatoes
- 1 cup Chickpeas
- 3 cloves Garlic ( peeled and smashe d )
- 1 tbsp. Oil
- 1 cup Raisins
- 2 cups Water
- 3 Green chilies
- 1 tbsp. red pepper
- 1 tbsp. Curry powder
- 1 tbsp. Fenugreek seeds
- 1 tbsp. Cumin seeds
- 1 tbsp. Fennel seeds
- chunk Ginger ( peeled and smashe d )
- tbsp. Salt
- 1 tbsp. Olive oil
- cup Cilantro
- cup Tamarind syrup
- tbsp. Soya sauce
- Prior prepared dough

Directions:
. Heat oil in a pa n . Put ginger and garlic and heat for a minut e . Make sure they produce a sweet arom a .
. Put fennel seed, cumin and fenugreek seed s . Fry them for 3- 5 minute s .
. Take the pepper and wash them wel l . Cut them into thin piece s . Add it to the pa n .
. Add chil i . Stir and make sure they do not stick in the pa n .
. To the mixture, add the mashed potatoe s . Stir to make sure all the Ingredient List: are well mixe d .
. Remove the Ingredient List: from the fire and add curry powde r . Mix well to spread evenl y .
. Leave it to cool dow n .
. Take the prior prepared dough and cut into equal piece s .
. Roll the piece using a rolling pin to circular shape s .
1. Cut them into four equal parts.
1. Fold the pieces from the bottom right corne r . This will give you a triangular shaped samos a . Seal the edges with wate r .

1. Heat oil in a frying pa n . Dip the samosa to deep fry until they are crispy and golden brow n .
1. Drain and dry the m .

3) Meat Samosa
This is a samosa made of meat of any type; mutton, pork, beef or chicke n . If you prefer meat to vegetables, this is the right samosa for yo u .

Ingredient List:
- Oil
- 1kg minced meat
- tbsp. salt
- 2 large white or red onion, finely chopped
- 1 tbsp. chilli
- 2 crushed gloves garlic
- teacup of water
- tbsp. cinnamon powder
- tbsp. ground cumin
- 2 freshly chopped coriander
- 1 packet pastry sheets
- 2 eggs
- 3 cups Wheat flour

. Heat the pan, add oil to i t . Add onions and ground cumi n . Stir until they brown lightly.
