Introduction
Why do we adore holidays? For most of us in our adult years, there is a lot to do with the happy memories we had of holidays past the first snowfall, Christmas dinner with family, and the first memorable New Years Eve when we got to party with the grown-ups! Its also because its a time to pause and reflect over the year gone by while getting together with family, friends, and those co-workers that we never otherwise take the time to hang out with.
Wouldnt you agree, though, that a lot of our passion for is the time of year has to do with food? Munchies with drinks, succulent roasts, special desserts, and day after breakfasts all enhance our enthusiasm for the year to come with all its potential for positive change after one last glorious fling!
I hope that youll enjoy the holidays this year and youll try out a few of the recipes in this cookbook. Whether youre a novice cook or one with more experience, youll find great meal ideas in the cookbook. The recipes are flexible as well, so feel free to improvise for instance, in recipe 8 (Chinese Beef Casserole), you could substitute pork or chicken for the beef with equally delicious results. For recipe 13 (Roast Pork with Parsnips), you could substitute rutabaga for the parsnips. You got the ideas!

1 Zesty Fish Chowder
Fish chowder is a traditional holiday dish, often served on Christmas Eve and New Years Eve. Bacon and a bit of ketchup add interest, and the carrots and celery provide visual appeal. This rich offering is perfect served with crusty rolls.
Makes 6 cups
Cooking + Prep Time: 1 1/2 hours
Ingredients:
2 lb. any white fish fillets (cod, halibut, sole, etc.)
1/4 cup diced bacon
1 onion
4 medium-size potatoes
4 medium carrots
4 celery stalks, with leaves
1 quart water or fish broth
1 x 16-oz. can diced stewed tomatoes with juice
2 tbsp. each ketchup and Worcestershire sauce
Pinch of dried thyme
Salt and pepper, as desired
Instructions:
Cut the fish into bite-size pieces.
In a heavy saucepan, fry the bacon until crisp.
Remove the bacon but leave the grease.
Chop the onion and add to the pan, cooking until just transparent.
Peel the potatoes and carrots and dice the celery, adding to the pan along with broth, tomatoes, ketchup, Worcestershire sauce, thyme and seasonings.
Cover and simmer gently for about 45 minutes.
Add the fish and bacon to the saucepan and cook, covered, for 15 more minutes.
2 French Pea Soup
This soup is colorful and savory. Its the perfect comfort to a cold winter night while awaiting the New Years Eve festivities. Serve it with sliced baguettes and a palate-cleansing green salad, and its a complete meal!
Makes 2 quarts
Cooking + Prep Time: 3 & 3/4 hours
Ingredients:
1/2 cup dried yellow split peas
Cold water, as needed
1 large onion
2 leeks
1 celery stalk
3 medium carrots
3 medium potatoes
1 small turnip
6 tbsp. butter
1 1/2 quarts chicken stock
1 garlic clove
Salt and pepper, as desired
Instructions:
Wash the split peas and pick them over, discarding any that show dark spots or other imperfections.
Place the peas in a heavy saucepan and add cold water to cover.
Boil for 2 minutes and remove from the heat, allowing to soak for 2 hours.
Return the pea mixture to heat and simmer for 30 minutes.
Drain thoroughly.
Peel and chop the onion.
Wash the leeks and celery.
Peel and chop the carrots, potatoes and turnip.
Heat the butter on low heat in a large saucepan and fry the chopped vegetables for about 10 minutes dont allow them to brown.
Add the stock and garlic and return to a boil.
Add the peas, return to a boil, and simmer for 1 hour.
Remove the garlic.
Serve on its own or over slices of crusty bread.
3 Turkey Vegetable Soup
This is a great way to serve the leftover Christmas turkey you need to use up before planning your New Years menus. Even if youre tired to death of turkey leftovers, youll still love this soup! It freezes well, so you can put some aside for days when you want a comforting lunch but dont feel like cooking.
