Introduction
The description is probably a bad start for Elsa but dont worry, the chapter dedicated to her will be worse. Kidding. Or are we?
Jokes aside again, this recipe book will be filled with chapters dedicated to your favorite Atypical characters - from food, theyd probably eat to the ones they probably shouldnt (theres a non-alcoholic drink chapter dedicated to Elsa). There are even dishes that they should probably just make at home. We mean this in the best way possible, but we have got to stop Sam and Paige from having one more dinner at Olive Garden. We cannot handle one more breakup! We just cant. From this day forward, these two will only be ingesting pasta with the help of the recipes in this book.
We are so excited for you to flip through these pages and reconnect with your favorite Atypical characters through food - whether you feel like you want something easy and fuss-free like Doug, to days when you feel like being as cool as Casey.
The Chapins Breakfast
The Chapins may not be the main characters, but the thing we should all agree on is that breakfast with Evan and Beth would be pretty chill. Beth will probably be making an amazing coffee cake out of literal air while everyone dishes their theory about aliens and considers a career as an EMT because...well, because Evan.
1. Evans Breakfast Muffins
Unlike his sister Beth, Evan doesnt strike me as the guy who would wake up at 5 am to cook breakfast, which makes these egg muffins perfect for him! They are delicious and can also easily be made ahead of time for those extra early EMT shifts with Doug!
Yields: 12 servings
Prep time: 25 minutes
Ingredients:
8 large eggs, whisked
cup whole milk
cup spinach, steamed
6 cherry tomatoes, diced
6 bacon strips, cooked and crumbled
cup cheese, grated
cup green onion, finely chopped
Salt and pepper, to taste
Cooking spray
Instructions:
Preheat the oven to 350F.
Spray a non-stick muffin tin with cooking spray.
Add the eggs, milk, salt, and pepper to a medium-sized bowl. Whisk until well combined and fluffy. Set aside.
Combine the spinach, tomatoes, bacon, cheese, and green onion in a separate bowl.
Fill each cavity with the veggie-cheese mixture until it is a quarter-full.
Pour the whisked egg mixture into each cavity until it is two-thirds full (including the veggies).
Bake for 11-13 minutes, or until the egg muffins are cooked through.
Remove from the mold and enjoy them warm!
2. Beths Eggnog French Toast
This breakfast treat has Beths name written all over it. A simple breakfast with an extra sweet twist from the sweetest girl on the planet herself (except when shes upset at Casey).
Yields: 6 servings
Prep time: 55 minutes
For the French toast:
1 bread loaf, sliced
2 cups eggnog
6 eggs, whisked
cup brown sugar
1 tsp vanilla extract
tsp salt
1 tsp ground cinnamon
tsp ground nutmeg
For the syrup:
Instructions:
For the syrup, combine all ingredients in a saucepan over medium heat. Bring it to a light boil and stir until the sugar has melted and everything thickens. Remove it from the heat and set it aside.
For the French toast, mix all ingredients in a large bowl except for the bread. Mix until well combined.
Add the bread into the bowl and soak in the mixture overnight. Refrigerate the bowl overnight.
Preheat the oven to 350F and bake the bread on a baking tray for 45-50 minutes.
Serve warm with syrup and enjoy!
3. Beths Peach Cinnamon Rolls
These Peach Cinnamon Rolls are an incredible twist on a traditional breakfast roll. Definitely, something Beth would bake for everyone she loves.
Yields: 16 servings
Prep time: 2 hours
For the dough:
1 cup water, warm
2 tbsp instant dry yeast
cup + 1 tbsp sugar, divided
1 cups milk, warm
cup butter, melted
2 tsp salt
2 eggs, whisked
7 cups all-purpose flour, divided
2 tbsp vegetable oil
For the filling:
Instructions:
Combine 1 tbsp of sugar, water, and yeast in a small bowl. Whisk to combine and let it rest for 15 minutes.
Combine the milk, butter, salt, and remaining sugar in a large mixing bowl. Mix until well combined.
