Casseroles can be a convenient way to prepare dinner for the family or for entertaining friends. On busy days, a little kitchen prep the night before is really helpful. Whisk up eggs for scrambling, stir together dry ingredients for waffles and lay out tableware ahead of time. In the morning, youll be a relaxed hostess!

1 lb. ground Italian pork sausage

1/2 c. onion, chopped

7-oz. jar roasted red peppers, drained, chopped and divided

10-oz. pkg. frozen chopped spinach, thawed and squeezed dry

1 c. all-purpose flour

1/4 c. grated Parmesan cheese

1 t. dried basil

1/2 t. salt

8 eggs, beaten

2 c. milk

1 c. shredded provolone cheese

In a skillet over medium heat, brown sausage with onion; drain. Transfer to a greased 3-quart casserole dish. Sprinkle with half of the red peppers; top with all the spinach. In a large bowl, combine flour, Parmesan cheese and seasonings; set aside. In a separate bowl, whisk together eggs and milk; stir into flour mixture until blended and pour over spinach. Bake, uncovered, at 425 degrees for 15 to 20 minutes, until eggs are set and a knife tip inserted near the center comes out clean. Top with provolone cheese and remaining peppers. Bake for 3 to 5 minutes longer, until cheese is melted. Let stand for 5 minutes before serving.

1/2 c. cooked ham, diced

5 eggs, beaten

3/4 c. milk

1/4 t. dried basil
