Chapter 1: Breakfast
Delicious French toast Casserole
Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serve: 4
Ingredients:
- 2 eggs
- 1 cup of water
- 2 1/2 tbsp butter, melted
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 6 tbsp brown sugar
- 1/4 tsp nutmeg
- 1 1/2 cups milk
- 1/2 bread loaf, cut into cubed
- 1/4 cup maple syrup
Directions:
- In a large bowl, whisk together eggs, butter, vanilla, cinnamon, nutmeg, brown sugar, and milk.
- Spray a 7-inch baking dish with cooking spray.
- Add bread cubed into the egg mixture and stir to coat.
- Pour 1 cup of water into the instant pot then place the trivet in the pot.
- Pour bread mixture into the prepared baking dish and place dish on top of the trivet.
- Seal pot with lid and cook on manual high pressure for 25 minutes.
- Once done then release pressure using quick-release method than open the lid.
- Carefully remove baking dish from the pot.
- Pour maple syrup on top and serve.

Easy Breakfast Grits
Preparation Time: 10 minutes

Ingredients:
- 1 cup ground white grits
- 1 cups of milk
- 3 cups of water
- 1/2 cup cheddar cheese, shredded
- 2 tbsp butter
Directions:
- Add butter into the instant pot and set the pot on saut mode.
- Once butter is melted then add grits and cook for 1-2 minutes.
- Add water and salt and stir everything well.
- Seal pot with lid and cook on manual high pressure for 10 minutes.
- Once done then allow to release pressure naturally for 10 minutes then release using quick-release method.
- Open the lid. Stir in cheese and milk.
- Serve and enjoy.

- 14 oz can pumpkin puree
- 4 1/2 cups water
- 2 tbsp pecans, chopped
- 2 tbsp walnuts, chopped
Directions:
- Add all ingredients except pecan and walnuts into the instant pot and stir well.
- Seal pot with lid and cook on manual high pressure for 3 minutes.
- Once done then allow to release pressure naturally then open the lid.
- Stir well and top with pecan and walnuts.
- Serve and enjoy.

Roasted Baby Potatoes

Ingredients:
- 2 lbs baby potatoes, scrubbed, washed and pierce each potato
- 2 tbsp olive oil
- 1 cup vegetable broth
- 2 garlic cloves, peeled
- For seasoning:
- 1/2 tsp sage
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1/2 tsp rosemary
- Pepper
- Salt
Directions:
- Add garlic, potatoes, and broth into the instant pot and stir well.
- Seal pot with lid and cook on manual high pressure for 11 minutes.
- Once done then release pressure using quick-release method than open the lid.
- Drain broth from pot and pat dry the potatoes.
- Set pot on saut mode. Add seasonings and oil into the pot and stir well.
- Cook on saut mode for 5 minutes.
- serve and enjoy.
