Chicken Recipes
1. Sheet Pan Balsamic Chicken with Potatoes and Carrots
Prep Time: 10 minutes
Cooking Time: 40 minutes
Servings: 4 persons
To make it a bit tangy and spicy, feel free to squeeze a lemon on top of everything and then, drizzle with the chat masala, crushed red chili powder and black pepper.
Ingredients
4 skinless boneless chicken breasts, pounded into even thickness
1-pound carrots, peeled & chopped into 2 pieces
2 pounds gold and/or baby red potatoes, chopped into 1 pieces
1 cup balsamic vinegar
teaspoon dried basil
1 teaspoon garlic powder
teaspoon dried thyme
2 tablespoons parmesan cheese, grated
cup honey
3 tablespoons olive oil
Pepper & salt to taste
Directions
Preheat your oven to 400 F in advance.
Arrange the potatoes on 1/3 space of a lightly greased sheet pan, preferably in a single layer, carrots on 1/3 space, and chicken on the leftover space of your sheet pan.
Next, over moderate heat in a medium-sized sauce pan, bring the honey and balsamic vinegar to a boil. Cook until reduced by half, for 5 minutes. Once done, remove from heat & pour the mix into a medium-sized, heat-safe bowl.
Drizzle the carrots, chicken, and potatoes with oil & rub with your fingertips. Now, season the carrots, chicken and potatoes with pepper and salt to taste then, sprinkle with garlic powder, thyme, and basil.
Sprinkle parmesan cheese on top of the potatoes and spoon of the prepared balsamic sauce on top of the chicken.
Bake in the preheated oven until carrots/potatoes are just tender and chicken is thoroughly cooked, for 20 to 25 minutes. Drizzle the leftover balsamic sauce over the carrots and chicken, serve immediately and enjoy.

2. Mediterranean Chicken Sheet Pan Dinner
Prep Time: 20 minutes
Cooking Time: 40 minutes
Servings: 4 persons
My guests always loved this recipe and its quite easy to prepare as well. If you dont want to use olives, then you can substitute them for chopped artichoke hearts or capers.
Ingredients
8 mini bell peppers, halved lengthwise & seeded
1 pound baby potatoes, halved
2 tablespoons balsamic vinegar
cup extra-virgin olive oil
1 small red onion, sliced into petals
4 chicken thighs with skin
teaspoon black pepper
8 pitted kalamata olives
cup feta cheese, crumbled
1 medium lemon, sliced
cup fresh parsley, chopped
Juice of 1 lemon, fresh
1 teaspoon each of dried tarragon, dried oregano, paprika, and salt
Directions
Line a large-sized rimmed baking sheet with the aluminum foil and then, preheat your oven to 425 F in advance.
Next, whisk the olive oil with juice of 1 lemon, tarragon, vinegar, paprika, oregano, pepper, and salt in a large-sized mixing bowl. Add the onion followed by potatoes, baby bell peppers and chicken thighs, give the ingredients a good stir until everything is coated evenly.
