Soups Recipes
Broccoli Cream Soup
Cook time: 7 minutes
Serves: 4
Ingredients:
1 lb. broccoli, cut into florets
1/2 cup carrots, sliced
2 1/2 cups vegetable stock
1/3 cup heavy cream
Pinch of grated nutmeg
Nutmeg for garnish
Salt and black pepper to taste
Directions:
Combine the broccoli, carrots, and stock in a pressure cooker. Close the lid and bring the cooker to high pressure and cook for 5 minutes.
Release the pressure with a quick release method and remove the lid. Stir in the cream and nutmeg, and season with salt and pepper.
Serve the soup with a dash of nutmeg.
Potato Cream Soup with Corn
Cook time: 15 minutes
Serves: 6
Ingredients:
8 strips bacon, chopped
1 onion, diced
3 carrots, diced
2 cloves garlic, minced
3 celery ribs, diced
1 green bell pepper, diced
1 red bell pepper, diced
3 cups corn kernels, frozen or fresh
3 cups small yellow potatoes, diced
1/8 tsp. cayenne pepper
1 tsp. dried thyme
1 tbsp. flour
2 tsp. salt
ground pepper
1 L. chicken stock/broth
1/2 cup heavy cream
1/4 cup chopped fresh parsley
Directions:
Preheat the pressure cooker then add bacon and cook until crispy.
Put aside.
Add onion, carrots, celery, peppers, garlic, corn, and potatoes to the pressure cooker.
Cook for 2-3 minutes and then sprinkle with cayenne, thyme, flour, salt, and pepper. Stir well to distribute evenly over vegetables.
Add the chicken stock.
Close the lid and bring the cooker to high pressure and cook for 6 minutes. Release the pressure with a quick release method and remove the lid.
Stir the soup and use a potato masher to crush some of thepotatoes.
Add the cream.
Season with more salt and pepper if needed.
Garnish with the crispy bacon pieces.
