The Chinese recipes included in this booklet are traditional to Northern China and are nutritious and well balanced. Ingredients:
2 lb stew beef 2 tbsp rice wine 3 tsp brown sugar 3 tbsp soy sauce 2 tbsp dark soy sauce 1 star anise 3 tbsp olive oil 1 tsp sesame oil 2 cups water 1 carrot cut inch chunks 6 oz shiitake mushroom stemmed and halved 2 medium potato peeled cut into 1-inch cubes Salt to taste
Cooking:
1. Put 2 slices ginger and water in a large pot bring the water to boil then add the beef and boil uncovered for 3-5 minutes. 2. Drain and discard the water and ginger.

Rinse beef well under hot tap water, and dry well. 3. In a large pan on low heat add oil, add 3 tbsp brown sugar. Mix and stir until sugar becomes white- yellow with small bubbles, increase heat to high, put beef into the pan and stir-fry beef until the water is gone, continue stirring the beef in the oil for 1 min. 4. 5. 5.

Put rice and water in the pressure cooker press [manual] set 8 minutes and set aside. 2. Heat 3 tbsp oil on medium- high heat in a frying pan, add the eggs while stirring. Continuing to stir, add green onions and mix well. Remove the eggs and onions and set aside. 3.

In the same pan add 1 tbsp oil heat up add frozen peas and carrots stirring for 1 min, add the cooked rice, eggs, oyster sauce, sesame oil, salt and pepper, mixing very well. 4. Reduce the heat to low and cover lid, let simmer for 6-7 minutes. 5. Open lid, taste, if required, add more salt and serve.
