The Many Health Benefits of Gelatin
Gelatin, also commonly referred to specifically as Jell-O, is a refreshing and fun dessert that not only tastes great, but also boasts a host of health benefits. Low in calories and high in amino acids such as glycine, gelatin supports digestive health by reducing the symptoms of anemia, acid reflux and bloating. It is also great for heart health and has been shown to elevate mood and memory. The refreshing jiggly dessert helps contribute to the healthy development of skin, teeth and hair and offers joint pain sufferers stronger tendons, lubricated joints and relief from rheumatoid arthritis. Its no wonder that so many hospital patients are given the jellified dessert during recovery!
Gelatin is easy to make and can be a great dish to create with kids. Remember to keep plenty of Cool Whip or other whipped topping on hand for a delicious garnish. For a pretty presentation, simple square gelatin cuts are always nice, but decorative Jell-O molds are also a great option and can be found in many big box/houseware stores, online or even in vintage shops. Coating a gelatin mold in advance with a nonstick cooking spray can help your creations unmold easier. Simply moisten your fingertips and gently pull the top edges of the gelatin away from the mold. Next, fill a bowl with slightly warm water and dip the mold in (avoiding the top). Hold for 20 seconds and place a large plate over the mold. Hold the two together, invert and gently shake to loosen. Gently pull the mold off. If the release does not occur on the first try, repeat the warm water method as needed.

7-Up Gelatin Salad
cup maraschino cherries (optional)
1 (8 oz.) package cream cheese, softened and broken into small pieces
1 can crushed pineapple, drained
1 cup 7-Up
1 cup boiling water
1 small package lemon or lime gelatin
1 teaspoon sugar
1 teaspoon vanilla
Dissolve gelatin in boiling water. Add cream cheese. Beat with an electric mixer at low speed until smooth. Next, stir in pineapple, sugar, and vanilla. Add 7-Up. Pour into a glass dish or mold. Refrigerate until set. #Delish!
Amazing Apple Spice Gelatin
cup red cinnamon candy
cup walnuts or pecans, chopped
1 (3 oz.) package of cherry gelatin
1 cup apples, peeled and chopped to bite-sized pieces
1 cup boiling water
1 cup cold water
Dissolve candy and gelatin in 1 cup boiling water. Add 1 cup cold water and chill until partially set. Next, stir in apples and nuts. Chill until firm and enjoy! #Delish!
Apricot Lovers Gelatin Surprise
1 (20 oz.) container of Cool Whip, thawed
1 (20 oz.) can crushed pineapple (undrained)
1 (8 oz.) package cream cheese, softened
1 cup hot water
2 (3 oz.) packages of apricot gelatin
2 large jars of apricot baby food
2/3 cup sugar
Mix gelatin, sugar and water. Bring to a boil, stirring constantly. Mix cream cheese and pineapple together. Next, add apricot baby food. Let first mixture cool to room temperature and add to apricot mixture. Fold in about 12 ounces of Cool Whip. Pour into a glass dish or mold. Refrigerate until set. Top with additional Cool Whip if desired. #Delish!
Bavarian Strawberry Cream Dessert
cup sugar
teaspoon almond extract
teaspoon vanilla
1 1/3 cup milk
1 cup whipping cream
1 (3 oz.) package of strawberry gelatin
TOPPING:
1 (10 oz.) package frozen sweetened strawberries, thawed
1.5 teaspoons lemon juice
2 tablespoons sugar
2 teaspoons cornstarch
In a 2-quart pan, stir together sugar and gelatin; add milk. Let stand for 1 minute. Cook and stir over low heat until gelatin is dissolved. Remove from heat and pour into a bowl. Next, stir in vanilla and almond extract. Refrigerate, stirring occasionally, until mixture is slightly thickened, and then beat until mixture is slightly foamy. Fold in whipped cream. Pour into lightly oiled mold(s) of your choice and refrigerate until set. Unmold and garnish servings with topping. For Topping: Drain and reserve juice from strawberries. Add enough water to juice to make cup. In pan, stir together 2 tablespoons sugar and 2 teaspoons cornstarch; stir into juice mixture. Cook over medium high heat, stirring constantly until mixture comes to a boil; remove from heat; stir in 1 teaspoon lemon juice and the berries; cover; refrigerate until you are ready to use with gelatin dish. #Delish!
Belles Blackberry Gelatin
1 (3 oz.) package of lemon gelatin
1 pint boiling water
1 small container of Cool Whip, thawed
2 cups fresh blackberries
Dissolve gelatin in boiling water. Chill. When slightly thickened, fold in blackberries. Chill until firm and unmold. Serve with dollops of Cool Whip or swirls of whipped cream and additional fresh berries if desired. #Delish!
Berry Delightful Gelatin Salad
1 (3 oz.) package of raspberry gelatin
1 cup boiling water
1 package frozen raspberries
1 can whole berry cranberries
Dissolve gelatin in boiling water. Mix in raspberries and cranberries. Pour into a glass dish or mold. Chill until firmly set and serve. #Delish!
Bing Cherry Gelatin Salad
1 (16 oz.) can crushed pineapple
1 (8 oz.) package cream cheese (softened)
1 cup Coca-Cola
1 quart pitted canned cherries
2 (3 oz.) packages of cherry gelatin
Drain juice from fruit and add water to make 3 cups boiling liquid. Pour over gelatin to dissolve. Stir in cola. When gelatin has slightly thickened, add cherries, pineapple, and cream cheese, broken into pieces. Pour into a serving dish and chill until set. #Delish!
Bodacious Banana Fluff
1 cup boiling water
1 cup canned crushed pineapple
1 cup cold water
1 (3 oz.) package of strawberry gelatin
1 teaspoon salt
3 bananas, crushed
9 large marshmallows, finely cut
Dissolve gelatin in boiling water; add cold water and salt. Chill until cold and syrupy, but not completely set. Whip the gelatin mixture until it begins to foam. It will be fluffy and thick like whipped cream. Fold in all remaining ingredients. Turn into chosen mold or a glass dish. Chill until firm. Unmold or slice and serve. #Delish!
Bunny Hop Gelatin
teaspoon salt
cup sugar
1 cup carrots, grated
1 small can crushed pineapple
1 (3 oz.) package of lemon gelatin
2 tablespoons lemon juice
Drain the pineapple and add enough water to the juice to make 1 cups. Heat to boiling. Add gelatin and stir until dissolved. Stir in sugar, salt, and lemon juice. Pour into a glass dish or mold. Chill until slightly thickened. Add pineapple and grated carrots. Chill until firm. #Delish!
Cheery Cherry Apple Salad
1 cup cherries, pitted and finely cut
1 (3 oz.) package of lemon or lime gelatin
1 pint boiling water
1 tablespoon vinegar
1 teaspoon salt
2 apples, pared and diced
Dissolve gelatin in boiling water. Add vinegar and salt. Pour thin layer in individual molds. Chill until firm. Combine apples and cherries. Place lightly in molds, filling them half full. Fill molds with remaining gelatin. Chill until firm. Unmold and serve. #Delish!
