The tortilla is considered the national bread of Mexico, where it is usually served with beans, meat, and vegetables. Mostly, tortillas are made at home and consumed fresh. The difference between street tacos and tacos is quite simple. Street tacos are made with soft tortilla, mostly corn tortillas but also flour tortillas. They are sometimes of smaller sizes than the regular tacos, which mainly refer to hard shells.
They get their name from the street food vendors in Mexico. Most recipes in this cookbook are made for soft shells tacos, closer to street tacos. In America, tacos are mostly served with hard shells but more and more, soft shells are used to make this unique and plentiful dish we love so much. In this cookbook, and according to your preferences, you can use both soft tortilla and hard taco shells unless specified. As you go, you will develop a preference according to the ingredients and flavors you want to develop.

Though the taco is undoubtedly one of the biggest worldwide food sensations in history, the exact year of its creation is unknown.
Still, culinary historians estimate it to be sometime in the 1500s. The first tacos were made with thin slices of meat that was cooked over open fire or coals. This cooked meat was then layered over corn tortillas and topped with onion, guacamole, salsa, and lime. These early tacos were known as carne asada tacos. With time, the tacos popularity increased, expanded throughout Mexico, and made its way to America. During that time, the de cabeza taco, which was made with cow head or carnitas (pork pieces), was developed.
By 1905 tacos were widespread throughout America. Hard shell tacos were invented in the mid-1900s and became an instant hit. Since that time, many Mexican restaurants have featured this taco in their menus. No doubt due to their unique combination of simplicity and versatility that allows the cook to easily add meat, fish, pork, ground meat, salad, relish, sauces, cheeses, tomatoes, guacamole and many other ingredients to offer endless flavor, tacos have been a worldwide sensation for centuries.
