1. Beef and Rice Tacos
These tacos make a great weekday dinner. Cooking Time: 35 minutes Servings: 4 Ingredients:
Directions: Heat the olive oil in a skillet.
Season the ground beef with taco seasoning, salt, and pepper. Brown the beef for 5 minutes and set aside. Place the bell pepper and onion in the same skillet and saut for 5 minutes. Add the water and the Mexican rice and bring the mixture to a boil. Reduce the heat and simmer for 20 minutes, until the rice is done while keeping an eye on it. Mix in the brown beef and corn and simmer for 5 minutes, long enough to heat the beef.
Add the beef and rice mixture to the taco shells. Top the tacos with salsa
2. Carne Asada Tacos
Use a nice cut of beef for these tacos. Cooking Time: 13 minutes Servings: 6 Ingredients:
- 2 lbs. cubed sirloin
- Salt and pepper to taste
- 1 tbsp. canned tomatillos
- 1 chopped and seeded jalapeno pepper (or keep the seeds for added heat)
- 3 minced garlic cloves
- 2 tbsp. olive oil, divided
- 2 cups beef broth
- 12 corn tortillas
- 1 chopped onion
- 1 chopped tomato
- 1 sliced avocado

- 2 sliced lemons

Set aside Puree the tomatillo, jalapeno, and garlic in a food processor. Heat 1 tbsp. olive oil in a large skillet and add in the tomatillo mixture. Stir for 5 minutes. Mix in the beef broth and simmer for 30 minutes. Transfer the tomatillo mix to a 9 x13 serving dish.
Heat a second tbsp. olive oil in a skillet. Brown the beef for 5 minutes on low until it is no longer pink. Heat the tortilla at 350 degrees for 3 minutes in the oven Add meat to each tortilla and spoon the tomatillo sauce over the meat. Top with onions, tomatoes, avocado, cheese, and lemon slices.
This is the perfect meat filling for tortillas. Cooking Time: 7 hours Servings: 8 Ingredients:
- 2 lbs. beef roast
- 2 lbs. pork loin
- Salt and pepper to taste
- 3 cups Rotel tomatoes
- 2 chopped green chilis
- 1 cups enchilada sauce
- 2 tsp. taco seasoning
- 8 flour tortillas
- 1 cup shredded Mexican cheese blend
- 1 cup sour cream
Directions: Season the meat with salt and pepper and place in the slow cooker. Cut up the meat if necessary.
Stir in the remaining ingredients except for the tortillas, cheese, and sour cream. Cook on low for 6 hours. Remove the meat and shred it. Return the shredded meat to the slow cooker for 1 hour. Serve on tortillas with cheese and sour cream.
These are some of the tastiest tacos in Mexico. Cooking Time: 10 minutes Servings: 9 Ingredients:
- 2 lb. shredded beef
- lime juice
- Salt and pepper to taste
- 2 tbsp. olive oil
- 1 chopped onion
- tsp. cumin
- 18 corn tortillas
- 1 chopped jalapeno peppers
- 1 cup guacamole preferably homemade
- 1 cup shredded cheddar cheese
- 3 sliced limes
Directions: Marinate the beef in lime juice, salt, and pepper and 1 hour. Discard the marinade.
Heat the olive oil in a skillet and saut the onion for 5 minutes. Stir in the beef and season with cumin. Cook on low for another 5 minutes until the beef is the desired doneness. Fill each tortilla with the beef, onion, jalapeno, guacamole, and shredded cheese. Serve with lime slices.
