Lasagna
Chicken Lasagna
What a wonderful use of leftover chicken. If you want some heat, substitute chili peppers for the red bell pepper.
Cooking Time: 1 hour
Servings: 6
Ingredients:
6 uncooked lasagna noodles
1 cup shredded cooked chicken
1 tbsp. olive oil
lb. chopped mushrooms
1 chopped red bell pepper
1 chopped small onion
3 minced garlic cloves
cup chicken broth
8 oz, cream cheese
tsp. oregano
Salt and pepper to taste
2 cups shredded mozzarella cheese
3 cups tomato sauce great, if homemade
Directions:
Boil the noodles in a pot of salted water for 10 minutes, until they are done. Drain the noodles and set aside.
Preheat the oven to 350 degrees F.
Heat the olive oil in a skillet and saut the mushrooms, bell pepper, onion, and garlic for 5 minutes.
Combine the shredded chicken, broth, cream cheese, mushrooms, bell pepper, onion, garlic, and oregano in a bowl.
Stir in 1 cup mozzarella cheese and season with salt and pepper.
Pour 1 cup of tomato sauce into a 9x13 baking dish.
Create three layers of lasagna noodles, chicken mixture, and tomato sauce.
Top with the remaining cup of shredded mozzarella cheese.
Bake for 45 minutes.
Southwestern Lasagna
Enjoy some Mexican spices with your lasagna. This recipe uses corn tortillas instead of noodles.
Cooking Time: 45 minutes
Servings: 6
Ingredients:
2 tbsp. olive oil
1 chopped onion
1 cups shredded Cheddar cheese
1 tbsp. chopped jalapeno pepper
4 minced garlic cloves
3 cups hot sausage meat
cup picante sauce
1 tsp. Italian seasoning or to taste
4 cups tomato sauce
2 cups shredded Pepper Jack cheese
15 corn tortillas
Directions:
Preheat your oven to 350 degrees F.
Heat the olive oil in a large skillet.
Saut the garlic, jalapeno pepper, and onion for 5 minutes.
Add the sausage meat and season with the Italian seasoning.
Stir in the tomato sauce and picante sauce.
Combine all ingredients well.
Cover the skillet and simmer for 15 minutes.
Coat a 9x13 baking dish with non-stick spray.
Layer the baking dish with 1 tortilla, a layer of sausage and sauce, and a layer of pepper jack cheese.
Create 2 more layers.
Top the third layer with the cheddar cheese.
Bake for 45 minutes.
Spinach Lasagna
This is so smooth and tasty.
Cooking Time: 1 hour 15 minutes
Servings: 8
Ingredients:
1 tbsp. olive oil
10 oz. chopped frozen spinach
1 small, chopped onion
1 cup sliced mushrooms
cup grated parmesan cheese
3 minced garlic cloves
tsp. Italian seasoning
12 oz. shredded mozzarella cheese
4 cups of marinara sauce-preferably homemade
2 cups ricotta cheese
2 beaten eggs
Salt and pepper to taste
10 oz. cooked lasagna noodles
Directions:
Preheat the oven to 350 degrees.
Heat the olive oil in a large pot.
Saut the spinach, onion, mushrooms, garlic, and Italian seasoning for 5 minutes.
Cover with the marinara sauce and simmer for 30 minutes.
Combine the ricotta cheese, mozzarella cheese, parmesan cheese, and the eggs in a bowl.
Season with salt and pepper.
Pour 1 cup of sauce in the bottom of a lasagna pan.
Top with 4 noodles, half the remaining cheese and half the sauce.
Repeat the layering and end with the sauce.
Cover the pan with aluminum and bake for 55 minutes.
Remove the aluminum and cook for 15 more minutes.
