- 1 (3 lb.) eye of round roast, trimmed of fat and silver skin
Marinade:
- 1 cup dark brown sugar, packed
- 3 tablespoons Worcestershire sauce
- 1 cup soy sauce
- 1 tablespoon smoked paprika
- 1 teaspoon onion powder
- teaspoon garlic powder
- teaspoon garlic powder
- 1 teaspoon unseasoned meat tenderizer
- 1 teaspoon red pepper flakes
Instructions:
Thinly slice the meat into to -inch thick slices.
Combine the marinade ingredients in a bowl and mix well.
Place the meat in the marinade and mix until well-coated.
Transfer to a zip lock bag and refrigerate for 12 hours or overnight.
Preheat the oven to 175 F and line two baking sheets with aluminum foil. Set a baking rack in each baking sheet.
Remove the meat from the fridge and arrange on the baking racks in a single layer.
Place in the oven and bake for 3 to 4 hours while rotating the racks from front to back and top to bottom halfway through baking.
When the meat has dried to the touch, resembling leather, slightly crunchy on the outside, but chewy and tender on the inside, it is ready.
Remove from the oven and let cool completely.
Store the jerky in an airtight container and refrigerate for up to 2 weeks and up to 6 months in the freezer.
