IntroductionIve been juicing for myself and others since I opened my first health food store, Creative Health Foods, in 1967.
That store still stands today, but the health food store I spend most of my time in now is Gary Nulls Uptown Whole Foods, at Eighty-Ninth and Broadway in Manhattan, where each day we serve fresh, organic juices to approximately two thousand customers. Twenty years ago I wrote the first edition of The Joy of Juicing. It was the first of my books on the subject and became a health and nutrition bestseller. Back then I could not have imagined that today, tens of millions of individuals would be enjoying the full-spectrum benefits of fresh juice each day. Many people are now using their own extractors and blenders to make great juices and smoothies. For those who dont want to buy the produce and make it themselves, fresh bottled juices are widely available in markets across the country.
Companies such as Jamba Juice have created successful business models around juicing. Even Starbucks, which recently bought out a juice bar chain, has set its sights on the fresh juice phenomenon. Who could have thought juicing would have evolved to where it is today? Doing almost twenty hours a week of live broadcasting, all of which originates from ProgressiveRadioNetwork.com, I interview leaders in health and nutrition and field calls from listeners all over the United States and Canada. A high percentage of my guests and callers advocate juicing. More than ever, I hear testimonials of how people turned their health around while on a cleansing juice fast, or how individuals were able to lose weight or overcome conditions such as arthritis, high blood pressure, and cancer by using combinations of different juices. Its abundantly clear that increasing numbers of people are waking up to the many benefits juicing has to offer.
What you hold in your hands is the third edition of The Joy of Juicing. What this book contains that makes it different from previous editions and other books on this topic is a much more comprehensive understanding of what juicing can do for you. To begin with, we provide you with a guide on the basics of juicing and explain how you can get started on your own regimen today. We then take an in-depth look at the numerous scientifically established benefits of juicing. We explore the unique set of enzymes, phytonutrients, antioxidants, and chlorophylls found in natures superfoods and how they function synergistically to enhance our well-being through cleansing and detoxification as well as rejuvenation and repair of our DNA. Next, we bring you over one hundred juice recipes that were carefully designed to strengthen the body naturally and target specific areas of your health.
Whether you are looking for a juice to help you fight off a case of the flu, improve your digestive health, or flood your body with muscle-building nutrients after an intense workout, this book is a valuable resource for individuals dealing with dozens of common ailments and those who simply want to optimize their wellness. Expanding the benefits further still, we include in our recipes a range of therapeutic vitamins, minerals, herbs, and other supplements that have been proven to promote health and healing. Finally, we feature over one hundred delicious and creative superfood recipes. From energizing breakfast cereals, to appetizing soups and salads, to nourishing entres and scrumptious, guilt-free desserts, these easy-to-make recipes will support your well-being and leave you satisfied. The recipes included in this book were created with variety, taste, and therapeutic benefit in mind. But you should also understand that the recipes are intended as a starting point only.
Feel free to experiment to meet your own needs and your own perception of what your body can accept. You can be as creative as you chooseand as healthy and happy as you want! Gary NullYou need just two basic tools for juice and shake preparationa quality centrifugal juicer and a workhorse blender. With an average investment of about $200, you will be set for all your juicing joys. There are a number of good juicers on the market, but make sure to pick one that has a stable motor and low heat generation. If the juicer overheats, it can kill vital enzymes and decrease the digestive value of the preparations. The stability of the mechanism is more important than the number of rpms (revolutions per minute) the juicer boasts.
