CONTENTS Using an air fryer feels a little like baking in a future envisioned and popularized by the 1960s animated sitcom The Jetsons. An air fryer is a countertop kitchen appliance that cooks and bakes food using hot air circulationessentially, its a futuristic oven. Science and technology are indeed to thank for the invention of air fryer baking. The Maillard reaction, a chemical reaction that occurs when amino acids interact with sugars at very high temperatures, is the science behind the browning and crisping that happens in an air fryer.

Anyone is capable of mastering baking with this countertop oven. This cookbook will show you how. Air fryer baking has basically been one big science experiment. I didnt know which kinds of baked goods would actually work in an air fryer, and part of my job has been adapting my oven recipes for the smaller appliance. That meant a lot of reducing of measurements, since the air fryer I purchased was a bit on the smaller side, coming in at 3 quarts in capacity. This means the cake recipes yield a 6-inch cake.

Pies yield 6-inches too, unless otherwise stated. There are 3-inch tart recipes in here, for the smallest of indulgences. All of the recipes are technically small-batch, meaning they will serve up to 12 people. If youre having an intimate gathering and want to impress guests with miniature versions of their favorite baked goods, air fryer desserts will set you on your way. There seem to be countless air fryer versions on the market to choose from. The one I went with and the one I tested all of these recipes in is a 3-quart Avalon Bay air fryer.

It has an LCD touchscreen, which really does make it feel cool and futuristic. The fan that circulates the hot air, which is what cooks and fries the food, is barely noticeable, and quiet too. My air fryer came with a small 6-inch cake pan, but I found that I wasnt able to fill it with as much batter as I wanted, so I purchased a 6 2-inch aluminum cake pan instead, which worked out very well for me to make air fryer layer cakes. The instruction pamphlet that came with my air fryer urged me to fill my cake pan with only about 10 ounces of cake batter, which fills a 6 2-inch cake pan about halfway with batter. I think if we were to fill the cake pan with more than 10 ounces of batter, the tops and edges of the cake would brown long before the middle of the cake had a chance to bake at all. So keep this in mind when filling your cake pans; 10 ounces is the magic number.

Some of the baking tools I used for this book that I urge you to get your hands on for these recipes include: Picture 3Picture 4 one or two 6 2-inch cake pans Picture 5Picture 6 a kitchen scale, for weighing batters Picture 7Picture 8 parchment paper Picture 9Picture 10 a stand mixer or hand-held electric mixer, both of which will make your baking life so much easier Picture 11Picture 12 a 1-inch cookie cutter and a 3-inch donut cutter, for making those perfectly round treats Picture 13Picture 14 about four 4.75-inch tart pans with removable bottoms. I didnt know what to expect when I began air fryer baking. I wasnt even sure if desserts could really be done in the air fryer in a way that maintained their integrity. But Im happy to report that some of the best-tasting desserts Ive had have come straight from this futuristic appliance. It was a real pleasure to teach myself about air fryer baking, and I hope that the feeling of just having fun in the kitchen has been conveyed through these recipes, and that they evoke the same feeling in you. Air fryer cakes differ little from cakes baked in a traditional oven, except where pan size and bake time are concerned.

You will become best friends with a 6-inch cake pan for air fryer cake baking. Depending on the size of your air fryer, you may be able to fit a standard 8- or 9-inch cake pan into the air fryer basket. I purchased a 3-quart air fryer, which is a bit smaller than the most popular air fryer on the market right now, a Philips-brand 5-quart model. The first step in air fryer cake baking is adapting a cake recipe to work in the air fryer. This meant reducing the ingredient measurements for a standard 8- or 9-inch cake recipe by about half to work in a 6-inch cake. As I was writing and baking my way through this cake chapter, I found myself actually preferring to bake and decorate a 6-inch cake.

Its smaller and has less cake, sure, but for baking in the air fryer, a 6-inch cake is ideal. The smaller measurements for these cakes are fun, in a whimsical way that I usually roll my eyes at. Frosting a 6-inch cake put me, someone who is usually an anxious cake decorator, at ease. Im confident that youll feel the same way. One note: These cakes will dome quite a bit, but thats nothing a sharp serrated knife wont fix. Decorate these mini cakes however your heart wishes.

This recipe includes some plus measurementsdont let that throw you off. Miniature versions of average-sized baked goods often require unusual-looking measurements, as youll learn in this cake chapter. These marble loaf cakes are pretty moist and dont really need a frosting or even a drizzle, but a dusting of confectioners sugar is a great idea. YIELD: three 5 3 2-inch loaf cakes
