Introduction: GettingStarted with Cooking in a Rice Cooker
There is a common misconception that a rice cooker can only be usedfor boiling rice. There is no doubt that it is highly convenient tocook rice in an electric cooker. Yet, what most people don't knowis that there are many other recipes you can make using a ricecooker.
In fact, you would be surprised to learn about some of the thingsthat can be made in a rice cooker. From breakfast items to bakedgoodies to the traditional mac & cheese, the variety of recipesyou can try making in a rice cooker is virtually endless. You willhave to learn how to work the rice cooker before you can give theseago.
However, you don't need to worry as detailedinstructions and tips are provided to make the recipes listed inthis cookbook. The Recipes
As mentioned in the introduction, we will go over 25 amazingrecipes you can make in a rice cooker at home. To kick things off,we have got a traditional favorite: Mac & Cheese.
1. Mac & Cheese
It is quite probable that you have made Mac & Cheese many timesbefore. But have you ever made it in a rice cooker? Most likelynot! Let's look at how you can enjoy this indelible treat with atwist!
Ingredients:
2 cups Macaroni
1 cups shredded Cheese
1 cups Chicken Stock
1 cup Whole Milk
1 teaspoon Salt
Instructions:
Place macaroni, salt and chicken stock in therice cooker, clasp the lid and set it to cook for 15 minutes.
After the time is up, open the lid and addcheese and milk to the cooked pasta and stir to incorporate theingredients.
Close the lid of the cooker and set it tocook for 20-25 minutes more. The more you cook, the crustier thebottom of the macaroni becomes.
Be sure to check the mac and cheese once itis cooked midway, as rice cookers of different brands havedifferent heating levels.
Once it is cooked to your desire, transferthe mac and cheese to a bowl and serve.
2. Black Bean Chili
Moving on to something vegan, you will love the recipe for BlackBean Chili if you like spicy food. Not to mention its incrediblyhealthy as well.
Ingredients:
2 cans drained and rinsed Black Beans
1 can un-drained Black Beans
1 can Vegetarian refried Black Beans
1 large can chopped Tomatoes
2 diced Carrots
diced Onion
2 cloves crushed Garlic
1 tablespoon Olive Oil
1 tablespoon Cumin
1 cup Vegetable Broth
A pinch of Salt
Chopped Avocado, to serve
Shredded Cheddar Cheese, to serve
Instructions:
Place a large pot over medium heat and heatolive oil in it.
Saut onions in the pot until they aretranslucent.
Next, add garlic and carrots to the pot andcook until they soften up.
Transfer the cooked vegetables to a ricecooker and add tomatoes, chili powder, cumin and vegetablebroth.
Set the cooker to a 'quick cook' setting (orset it to 20 minutes if your cooker does not have the desiredfeature).
After 20 minutes, open the lid of the ricecooker and add black beans. Set the cooker to the same setting asbefore.
When this process is complete, place therefried black beans into the cooked beans and stir to combine.
Close the lid on the rice cooker and set itto warm. Meanwhile, you can set the dishes on the table and getready to eat.
When the dish is warmed, transfer it to abowl and serve it to your family and friends.
3. Lemon Risotto withShrimp
Do you like seafood? This recipe is the perfect amalgam of anItalian delicacy and shrimp. You will simply love it!
Ingredients:
1 cup Arborio Rice
12 medium sized Shrimp, peeled anddeveined
3 cups Chicken Broth
cup plus 1 tablespoon Parmesan Cheese,freshly grated
2 tablespoons Extra Virgin Olive Oil
cup White Wine
3 tablespoons freshly squeezed LemonJuice
1 tablespoon Lemon Zest, finely grated
4 Lemon Wedges
1 tablespoon fresh Parsley, chopped
5 teaspoons Butter
1 cup finely chopped Onions
Salt, to taste
Freshly ground Black Pepper, to taste
Instructions:
Set an empty rice cooker to heat on the'quick cook' setting, or for 20 minutes.
When the base of the cooker is hot, pourolive oil and 1 tablespoon butter.
When the butter is melted, place onions inthe bowl and saut them for 3-4 minutes, or until they are soft andtranslucent. Add lemon zest to the mixture.
Add rice to the cooker and stir it until itis coated in the previous mixture. Cook the rice for 4-5 minutes,or until it is browned.
Pour white wine into the cooker and stir intothe cooked rice. Next, add chicken broth and close the lid.
Set the mixture to cook for 20 minutes or theregular cycle. During the cooking, stir the dish twice or thrice toensure even mixing.
