1) Super Italian Meatballs

There is no right or wrong in the type of meat you will be using to prepare - photo 7

There is no right or wrong in the type of meat you will be using to prepare your next batch of homemade meatballs. However, I do prefer to use beef or a mix of beef and pork to prepare them. My sister prefers to use turkey and I have to say that hers are almost as good as mine! Joking aside, use meatballs on everything you enjoy them, there are no specific rule when it comes to food, remember!

Ingredient List:

  • pound ground beef
  • pound ground pork
  • cup panko crumbs
  • 2 tablespoons whole milk
  • 1 large egg
  • Salt, pepper
  • 3 minced cloves
  • 1 teaspoon onion powder
  • 1 cup shredded mozzarella cheese
  • cup fresh chopped fresh herbs; parsley, chives, basil, oregano

Yield: 6-8

Cooking Time: 55 minutes

Instructions:

Preheat the oven at 375 degrees.

Prepare two baking sheets, by spraying some non-sticking cooking oil on them. Set aside.

Mix all listed ingredients listed above in a large mixing bowl.

Using your hands always helps combining the ingredients better, I believe.

Form the meatballs the size you prefer them.

Place them apart on the baking sheets and bake for about 40 to 45 minutes.

Use these meatballs in meatballs subs, in spaghetti sauce or even on a salad any day of the week

2) The Must-Have Shrimp Scampi

If you are going to have some shrimp might as well have shrimp scampi or - photo 8

If you are going to have some shrimp, might as well have shrimp scampi or garlic shrimp of you prefer. Now, you can have your choice of preparing them in olive oil or in butter, it is equally good, just different. The most important ingredient of course is fresh garlic!

Ingredient List:

  • 1 pound medium size shrimp (peeled and deveined)
  • 5 minced cloves garlic
  • 3 Tablespoons olive oil
  • 2 Tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon olives tapenade
  • Fresh parsley to decorate
  • Salt, pepper
  • Pasta of your choice to serve the shrimp on (angel hair, spaghetti, fettucine, linguini, it does not matter)

Yield:

Cooking Time: 35 minutes

Instructions:

Make sure you peel, devein and clean really well the shrimp.

In a small bowl, whisk the oil, garlic, lemon juice, lemon zest, salt, pepper, olives tapenade.

In a large skillet, pour the oil mixture, cook the shrimp for about 10 minutes or until they are completely pink.

Depending on what you decided to serve the shrimp with or on, cook ahead the rice, quinoa, orzo or pasta.

Simply display a generous portion of the shrimp on the chosen bed of carbs.

3) Salmon and Artichoke Salad

This special salad can be made with rice or quinoa, your choice. It could also be simply served on a bed of greens. Key ingredients for me are fresh cooked salmon and artichoke hearts, but I have to say that red onions are hard to replace as well. I have tried to make this recipe with fresh cooked tuna and it is also very delicious.

Ingredient List:

  • 2 large salmon filets
  • 6-8 artichoke hearts
  • 1 cup crumbled Feta cheese
  • 4 cups mixed greens
  • cup olive oil
  • 2 minced cloves garlic
  • 1 tablespoon Dijon mustard
  • cup black olives
  • 2 Tablespoons chopped fresh cilantro
  • Salt, pepper
  • 2 cups cooked tricolored quinoa

Yield:

Cooking Time: 45 minutes

Instructions:

Cook the tricolored quinoa as indicated on the package and set aside.

In a mixing bowl, whisk the olive oil, garlic, Dijon mustard, salt, pepper and cilantro.

In a skillet, place the salmon fillet skin down and season with salt and pepper.

Add the oil mixture and make sure to cover both filets and cook for about 15 minutes.

Assemble the final dish when the salmon is cooked, and cut it in small pieces.

Display a bed of greens son each plate, a small portion of cooked quinoa, half of a salmon filet, Feta cheese, black olives and artichoke hearts.

4) Grilled Veggies Fettucine Delight

Nothing like a delicious plate full of pasta, such as fettucine with a sauce and many fresh vegetables to make you happy. Use your grill to prepare the veggies to add that very particular taste you are looking for in such a dish. Dont forget the fresh herbs and seasonings, very important to give it a little kick.

Ingredient List:

  • 1 box or package uncooked fettucine
  • 4 Tablespoons avocado oil
  • 3 minced cloves garlic
  • 1 sliced yellow squash
  • 1 sliced red onion
  • 1 sliced red bell pepper
  • 1 sliced green bell pepper
  • 1 medium sliced zucchini
