Bev Laumann was on her way to a career in science when her IC struck.Undaunted, she applied those skills to IC outreach by running theOrange County IC Support Group and authoring the first book on theIC diet, A Taste of the Good Life: ACookbook for an IC Diet . For many years,Bev also contributed a feature column to the IC Networkwebsite, Fresh Tastes by Bev, a collection of more than fifty articles on foodand IC. What makes Bev truly special is her keen understanding ofthe science behind food, the use of preservatives, flavorings andso forth. She is one of the most educated and informed IC activistsin the world.
JulieBeyer MA, RDN wasthe first registered dietitian to make the case that food couldinfluence bladder health to the national dietitian community,traveling around the country educating nutrition professionalsabout interstitial cystitis and the unusual relationship that wehave with certain foods. Despite their often harsh questions aboutthe lack of research (now moot), she fearlessly shared her personalexperience as an IC patient and the stories of many others whofound themselves struggling with severe pain after eating certainfoods. Julie has also answered questions about the IC Diet in theICN Support Forum for more than a decade. Julie is the author ofthree books dedicated to the IC Diet: Confident Choices: Customizing the ICDiet , ConfidentChoices: A Cookbook for an IC andOAB and Interstitial Cystitis: A Guide for NutritionEducators.
Barbara ShorterMS, MEd, EdD is an associate professor ofnutrition at Long Island University and the Smith Institute ofUrology. She developed and conducted several research studies thathave proven the connection between food, interstitial cystitis and,most recently, chronic prostatitis, including the ground breakingstudy Effects of Comestibles onInterstitial Cystitis/Painful Bladder Syndrome published in the Journal ofUrology. Barbara, too, has IC and alsoprovides nutrition counseling to patients at the SmithInstitute.
For more than adecade, Diane Manhattan Lopresti was the assistant manager of the ICN SupportForum. Each day, despite her own bladder symptoms, she spent hourshelping others. I asked Diane to organize and solicit recipes theICNs on-line IC Chef Cookbook and she poured herselfwholeheartedly into the task, amassing a wonderful collection. Herspirit lives on through the many IC patients shebefriended.
The ultimatefoodie, Carole gently stepped into Diane s role and, for the past severalyears, has developed a now fabulous collection of recipes. One ofour best and longest serving volunteers, Carole clearly loves tocook and tweak recipes so that they are bladder friendly. Youllfind dozens of her recipes in this cookbook!

Foreword
Although interstitial cystitis wasidentified over 130 years ago, it wasnt until the advent of theInternet that patients could share information about IC, theirdiagnoses, treatment and, especially, diet with people all over theworld. In fact, we can directly trace the acceptance of food as anIC trigger and the eventual inclusion in the AUA treatmentguidelines for IC/BPS to the vast amount of information patientshave shared with each other over the past two decades. Notsurprisingly, these anecdotal reports of foods irritating ourtender IC bladders were eventually confirmed in a variety ofresearch studies proving that we, the IC patient, have considerableinsight and experience to offer.
For the pasttwenty years, Jill Osborne and the thousands of members of theInterstitial Cystitis Network Forum ( www.ic-network.com/forum )have shared their journeys with interstitial cystitis, includingthe recipes you find in this book. This cookbook is a celebrationof that wisdom and, more, importantly the empowerment that patientsexperience when collaborating with each other.
For thosepatients asking what can I eat withoutirritating my bladder, this book is fullof ideas. From Nomato Sauce that is a bladder friendly alternativeto tomato based pasta sauce to finding a satisfying alternative tocoffee or green tea, there are low acid options that work and workwell! Ingredient substitutions do not mean that quality suffers.You can enjoy some of your favorite flavors again with just alittle bit of creativity.
Just remember that every patienthas different food tolerances. You will, most likely, be adaptingmany of these recipes for your own unique tolerances. If you see arecipe that youd like to try but it contains an ingredient thatyoure not sure of, just leave it out or look for a less intensesubstitute. Vinegar, for example, can be swapped with blueberry orpear juice. If onions bother you, try chives. Lemon juice may beswapped with a little bit of lemon zest. If you crave chocolate,try white chocolate or carob instead! I encourage you to play withflavors! You can enjoy cooking and meals again!
