Sometimes I think I wrote this book in my dreams since I started it during the same very busy summer when I launched my paleta company, La Newyorkina. Many people helped me during that time, making paletas, selling them, or supporting me in countless other ways.

First I have to thank Melissa Moore, my friend and editor, for having the vision for this book and sharing my enthusiasm for the frozen treats of Mexico. As with my first book, designer Katy Brown made everything so beautiful and captured the flavor of Mexico with her incredible aesthetic sense and wonderful artistic eye. I feel blessed because everyone at Ten Speed has been wonderful to work with and I look forward to a continuous, fruitful relationship for years to come.

Speaking of lasting relationships, I wouldve never had the opportunity to write these books without my agent, Lisa Queen, whom I admire and care about deeply.

Including aguas frescas recipes in this cookbook would seem obvious because they go hand in hand with paleta making, but I have to thank my dear friend Alex for the idea. She is a continuous source of inspiration and support, for which I am deepy grateful.

Its hard to express my enormous gratitude to Eric, who has been there for me from the very beginning. Without him, we might not have had any paletas for La Newyorkinas opening weekend. More importantly, I will forever be grateful for his continuous kindness, support, and love.

I owe many thanks to my grandmother Ana because her words of wisdom have given me strength in the toughest moments; I dont think she realizes how much she has inspired me to follow my dreams. And she went out of her way to get me the molds and bags I needed to make the paletas! She is simply a beautiful and awesome person.

For countless reasons, my dad is the person in my life I admire most. His thirst for knowledge and incredible inner strength continuously inspire me to push myself in every aspect of life. I am incredibly grateful for all he has done for me.

My mother introduced me to the wonderful sweetness of Mexicoeven though she doesnt like to admit that she has a quite a sweet tooth. My earliest memories of eating paletas are with her. She has always shown me to appreciate and value food through the quality of ingredients, and to take pride in what we do.

Life is simply more fun because of my siblings, nicknamed Yaelita and Jaisi Fus. Their love has carried me through the best and worst of times, and I am very, very fortunate to have them in my life and for the incredible bond that exists between us.

Manolo has been a hard critic since I was a little girl, but he does it to motivate me to push myself further and not be a conformist, and because he cares deeply. I love that about him! He is one of the most passionate people I know and that certainly rubs off and inspires those around him. I treasure his love and support tremendously.
