  • 1 pound cleaned shrimps
  • 5 Tablespoons olive oil
  • 3 Tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes
  • Salt
  • Pepper

Methods:

  1. Place a big pan over medium-high heat and add the olive oil.
  2. Once the oil gets hot, add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side.
  3. Add the lemon juice and cook for one more minute stirring continuously.
  4. Remove from heat, add the garlic powder, paprika, and red pepper flakes and enjoy.

  • A small onion, finely chopped
  • 2 handfuls of baby spinach

  1. In a medium saucepan over medium heat, saute the onion with 1 tablespoon of olive oil until translucent.
  2. Add the baby spinach and cook until it loses most of its volume.

  4. Season with salt and pepper. Add the cumin and the remaining olive oil and mix well.
  5. Enjoy warm with crusty bread.

  • 1 cup of lentils
  • 1 small onion
  • 1 cup tomato sauce
  • 2 medium potatoes, peeled
  • 4 Tablespoons olive oil
  • Salt

Methods:

  1. Put lentils in a big pot and cover with water. Let them sit for at least 4 hours.
  2. After that, drain and discard the soaking water. Set the lentils aside and start preparing the stew.
  3. Saut the onion in a medium pot with a drizzle of olive oil.
  4. Add the tomato sauce and cook for 2-3 other minutes.
  5. Cut the potatoes into cubes and add them in the pot.
  6. Add the lentils and 4 cups of water and bring to a boil. Once it reaches the boiling point, lower the heat and let it simmer for 30-40 min or until the potatoes and lentils are done.
  7. Season with salt and pepper and add the olive oil.

  • 20-30 mussels depending on their size, very well cleaned
  • 1 small onion finely chopped
  • 4 Tablespoons butter
  • 4 Tablespoons flour
  • 1 cup milk
  • cup white wine
  • Chopped parsley
  • Grated parmesan
  • Salt
  • Pepper

Methods:

  1. Add the clean mussels to a pot with cool water. Cook over medium-high heat, until the mussels are open.
  2. Remove from the heat and let cool.
  3. Discard one mussel half, while keeping the other with the mussel meat.
  4. Meanwhile saut the onion in a medium saucepan over medium heat with 1 tablespoon of butter.
  5. When the onion is cooked, add the remaining butter and flour and cook until a roux is formed.
  6. Add the wine and cook for 2-3 minutes.
  7. Gradually add the milk and cook until a nice and creamy bchamel is formed.
  8. Preheat oven to 375 F.
  9. Fill each mussel half with bchamel sauce and top with grated parmesan and chopped parsley.
  10. Bake in the preheated oven for about 5 minutes.
  11. Enjoy warm.
