This recipe is a tasty and healthy alternative to the processed Mac and Cheese that you would typically get in the supermarket. This chili also makes an excellent packed lunch because it is just as delicious cold.

  • 8 ounces elbow macaroni, whole wheat or white depending on preference
  • 1/3 ounce olive oil
  • 1 chopped onion
  • 2 chopped green bell peppers
  • 2 minced cloves garlic
  • 14 ounces canned tomatoes, diced and undrained
  • 8 ounces canned tomato sauce
  • ounce hot sauce
  • 1/3 ounce chili powder
  • 1 tsp. cumin, ground
  • tsp. cayenne pepper
  • tsp. black pepper, ground
  • 15 ounces canned white beans, drained
  • 15 ounces canned black beans, drained
  • 12 ounces canned whole kernel corn, drained
  • 6 ounces Cheddar cheese, shredded
  • 1 ounce green onion, chopped

Instructions:

1. Cook elbow macaroni in a large pot of boiling salted water for 12 minutes or until softened slightly

2. Drain the macaroni and set aside

3. Heat oil in a large frying pan on Medium heat.

4. Sautee onion, green peppers and garlic for 10 minutes or until onion is translucent

5. Combine the rest of the Ingredients in the pan and bring to a boil

6. Reduce heat, cover the frying pan and simmer for 30 minutes

7. Add macaroni to the chili, cover the pan again, and heat for another 5 minutes

8. Serve topped with cheese and green onions

(2) Vegan Pumpkin Chili

  • 15 ounces canned black beans
  • 15 ounces canned fire-roasted diced tomatoes
  • 3 diced red bell peppers
  • 1 diced onion
  • 8 ounces tomato sauce
  • 5 ounces baby spinach
  • 4 ounces canned green chile peppers, diced
  • 2 ounces canned black olives, sliced
  • 2 ounces orange juice
  • 5 minced cloves garlic
  • ounce vegetable oil
  • ounce tomato paste
  • ounce dark cocoa powder
  • ounce brown sugar
  • 1/3 ounce cumin, ground
  • 1/3 ounce chipotle powder
  • 1 tsp. salt
  • tsp. oregano, dried
  • tsp. coriander, ground

Instructions:

1. Combine all Ingredients to the pot of a slow cooker, stir thoroughly.

2. Cook on Low for 8 hours

  • ounce extra-virgin olive oil
  • 1 chopped green bell pepper
  • 1 chopped red bell pepper
  • 1 chopped yellow bell pepper
  • 2 chopped onions
  • 4 minced cloves garlic
  • 10 ounces thawed frozen spinach, drained and chopped
  • 8 ounces thawed frozen corn
  • 1 chopped zucchini
  • 1 chopped squash
  • 3 ounces chili powder
  • ounce cumin, ground
  • ounce oregano, dried
  • ounce parsley, dried
  • tsp. salt
  • tsp. black pepper, ground
  • 29 ounces canned tomatoes with juice, diced
  • 15 ounces canned black beans, drained
  • 15 ounces canned garbanzo beans, drained
  • 15 ounces canned cannellini beans, drained
  • 12 ounces tomato paste
  • 8 ounces tomato sauce,
  • 8 ounces vegetable broth

Instructions:

1. Heat oil in a large frying pan on Medium heat. Add bell peppers, onions and garlic and cook for 10 minutes or until onions are browned

2. Put the mix in the pot of a slow cooker

3. Stir in the rest of the Ingredients until mixed thoroughly

4. Cook on Low for 5 hours. Add more tomato sauce or broth if you want to make the chili thicker and cook for an additional 1-2 hours.
