Stir until the mixture comes to a boil, 5 minutes, then remove from the heat. Refrigerate for 15 minutes. Place the eggs in a pan of boiling water and cook for 10 minutes. Remove from heat and let cool. Heat the oil in a deep fryer. Peel the eggs and dust them with flour.

Combine the sausage, sage, marjoram, salt and pepper in a bowl. Use your hands and fingers to wrap the eggs with the sausage mixture. Roll each wrapped egg in the beaten eggs, then in the breadcrumbs. Use a slotted spoon to place the eggs in the hot oil. Fry for 5 minutes. Remove the eggs using a slotted spoon and drain on paper towel.

Serve the Scotch eggs with the Sauce.

Coat a baking dish with non-stick spray. In a large bowl, mix the flour, oats, sugar, maple, cinnamon, nutmeg, baking powder, salt, and walnuts. Create a well in the middle. Combine the egg, melted butter and milk in a separate bowl. Drizzle the liquid into the well. Stir to create a dough.

Use the dough to form 2 circles that are inch thick. Transfer the dough circles to the baking dish. Use a knife to divide each circle into 8 separate wedges. Bake for 15 minutes. Break the wedges apart and serve while they are still warm.
