Bread and Cheese Mastery

3 Books in 1: Artisan Bread (With Sourdough Recipes Included) + Keto Bread + Artisan Cheese Making at Home

Eric Faragher

Preface T his book is aimed at promoting the culture of artisanal bread - photo 1

Preface

T his book is aimed at promoting the culture of artisanal bread making. It brings the reader to understand the meaning of artisan bread, its nature - ingredients used; the origin - how artisan bread came to be by exploring both its actual origin and its reappearance in our generation; modern trends - changes and evolutions that have occurred to its nature and preparations over the years; its influence - how it has affected the bread market and consumption of substitutes such as cake; and its benefits - when compared to regular bread.

This book will serve as a guide to anyone wanting to venture into the art of handcrafted bread making. The text provides the basic and necessary information necessary to start from scratch with no prior training in the art. You could consider this a cookbook for dummies, but it will also be helpful for intermediate learners.

Artisan Bread contains over 50 recipes for bread, gathered from various sources and of varying varieties. The detailed and easy-to-follow recipes are categorized according to occasions, type, place of origin or common use and pairings with other meals.

It is important to understand that baking is both a science and an art. As a cookbook, this offers a scientific guide (in the form of a recipe) that requires one's artistic touch to turn it into an artistic production. Followed to the teeth, the recipes will replicate that exact look, feel and taste described by the recipe. However, since the quality of ingredients and the type of tools used may vary slightly depending on ones geographical location, it may require slight modifications by the baker to achieve the right balance for that precise result you expect as both the artist and the consumer.

Learning how to bake from a cookbook cannot compare to one-on-one training by an industry professional. However, this book is designed to provide the feel of a partner next to you in the kitchen as you begin or advance your journey of becoming a professional baker. This cookbook is ideal for someone just looking for a single one-time recipe, or someone looking to venture into the art of baking as a hobby or profession.

Introduction

W hat is Artisan bread? This is likely the first thing you considered once you decided to venture into the art of bread making. What you will discover is that there isnt a definite elaboration of the term Artisan Bread. Some will define it based on the preparation procedure and term it as, handcrafted bread deriving from the term artisan in the name. Others will define it on the basis of its nature, a type of bread with a short shelf-life, on many occasions offered unpackaged, and preferred for consumption immediately after baking to enjoy maximum freshness.

It breaks away from the common perception of square or rectangular bread having a doughy or squishy form. Artisan bread can be described more as a variety of bread having custom shapes, tastes, and textures. Artisan breads contain no preservatives; hence, it does not last long. Production of this kind of bread mainly takes place in small to midsized kitchens with the focal point being the number of artisans rather than equipment, as would be in the case of regular bread.

All bread produced in the past, predating the introduction of mass-produced and packaged bread, was considered artisan bread. In mass production, there is a need to replace vitamins and minerals lost in processing and add in preservatives to enable a longer shelf life.

It has superior texture and flavor because more attention is paid to the selection of ingredients, the mixing of these ingredients, and the chemical reactions that occur in the preparation process compared to their mass-produced counterparts.

Baking this kind of bread is a particularly involved process. Depending on the kind of bread and the technique you have opted for, the process could take from a few hours to several days, or even weeks. This can be daunting, especially if you are in it for commercial purposes and you feel intimidated by the world of fast foods and microwave meals. Evolution of Artisan Bread

Taking thousands old process and plunging it into the modern age of technology and cultural integration. Artisans have come up with amazing and ever-changing products that are not only about consumption but also aesthetics and artistic challenge.

We have moved from a period where it was a part of basic meals to an age where it is taken as a snack and refreshment. It is no longer just-food. Some people treat it as a valuable gift given for occasions such as welcoming a new neighbor. Others use it as booth food and temporary decorations for both homes and offices.

The ovens have also evolved with time. In the beginning of baking bread around the Mesopotamian period, clay pots were overturned and covered in charcoal and the dough would be placed inside the pot allowing it to be heated from all directions. The Greeks and the Romans then took this technique and improved it to what it was pre-industrialization. Ovens in the modern day are now complex and of various designs and sizes. We are now moving into the age of smart ovens that make temperature control and even heat distribution look like childs play.

Competitions and workshops for bakers are now held annually in various parts of the world to celebrate the art and challenge each other into improving recipes. Bread has evolved from being simply considered as food to an art form worthy of a following. DIY blogs are popping up everywhere as everyone is trying to learn the art. Forums have been developed by enthusiasts and artisans as well to share and help each other in bread making.
