INTRODUCTION
Its no secret that we love to bake in our family, but as I read recipes (and watch baking videos, these days), I cant help but feel l like theres something missing. Yes, dessert is delicious and will continue to be delicious for the foreseeable future, but baking wasnt always just about dessert. At one time, the having company was a treat, a break from the normal tasks during our weeks.
Sometimes a friend would drop by for a chat. Other times, there might be a small gathering arranged around a special event. And when we had people visiting, we served them teaand often, there was a plate or two of squares. And other gatherings too, whether they were after church, a bake sale, or a Sunday barbecue, would often have a table set up with tea, coffee, drinks for the kidsand a few kinds of squares to nibble on. We still bake squares and brownies and so on, but a lot of the old favorites have disappeared somewhere in the past. Do you recall the old were a big deal at one point.
Whatever happened to them? Thinking of how I used to love these, I dug out some old recipe boxes and got to work reading and reminiscing about the classic squares and bars I want to revisit. Aunt Eunice had a recipe for the . With the barely legible recipe cards, the bits of packaging, and the magazine cut-outs, I soon had my hands full with all the vintage treats I want to make again. And Im delighted to share this collection with you!
LAYERED AND ICED
Glazed Raisin Bars
These spiced raisin bars are from the 1940s, so theyre made with basic and wholesome ingredients. The gentle blend of spice is perfect with a cup of tea. time 15 minutes | Cooking time 25 minutes
Ingredients For the bars cup raisins 1 cup water cup butter 1 cup granulated sugar cup applesauce 1 egg 2 cups all-purpose flour 1 teaspoon baking soda teaspoon baking powder teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon ground ginger teaspoon ground cloves 1 cup chopped pecans For the glaze 3 tablespoons butter, melted 1 teaspoon vanilla 2 cups powdered sugar Heavy cream Directions
- Preheat the oven to 350F (177C) and lightly butter a 15x10x1 baking sheet.
- Combine the raisins and water over medium heat in a saucepan. time 15 minutes | Cooking time 25 minutes Ingredients For the bars cup raisins 1 cup water cup butter 1 cup granulated sugar cup applesauce 1 egg 2 cups all-purpose flour 1 teaspoon baking soda teaspoon baking powder teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon ground ginger teaspoon ground cloves 1 cup chopped pecans For the glaze 3 tablespoons butter, melted 1 teaspoon vanilla 2 cups powdered sugar Heavy cream Directions
- Preheat the oven to 350F (177C) and lightly butter a 15x10x1 baking sheet.
- Combine the raisins and water over medium heat in a saucepan.
Bring to a boil.
- Remove from the heat and stir in the butter, sugar, applesauce, and egg.
- Meanwhile, combine the remaining ingredients in a mixing bowl.
- Add the raisin mixture to the dry ingredients and mix just to combine.
- Spread the batter in the prepared pan and bake until set in the middle, 2025 minutes. Let it cool before glazing.
- To prepare the glaze, cream the butter in a medium bowl. Add the vanilla and powdered sugar. Gradually add cream until the mixture comes together and takes a consistency that can be spread.
- Cut into bars and serve.
Frosted Maple Squares
If you have a soft spot for maple, youre going to love this old recipe for maple squares. When I was little, this was always my first choice. time 10 minutes | Cooking time 20 minutes
Ingredients For the base cup salted butter, softened 1 cup brown sugar 1 egg 1 teaspoon vanilla cup pure maple syrup 1 cups flour teaspoon baking soda teaspoon salt For the icing 1 cup salted butter, softened 2 cups powdered sugar cup pure maple syrup teaspoon maple extract Directions
- Preheat the oven to 350F (177C) and butter a 9x9-inch baking dish.
- Beat the egg and sugar until light, and then incorporate the egg, vanilla, and maple syrup.
- Add the flour, baking soda, and salt, and mix just to combine.

Bake for 2025 minutes, or until the edges are golden and the center is set.
- Cool before frosting.
- To make the icing, combine the frosting ingredients and mix until smooth.
- Spread the icing over the cooled squares, cut, and serve.
Lebkuchen Bars
We had a German neighbor growing up and there was always something wonderful to eat in her kitchen. She made these bars at Christmas, and their warming spice mixture was perfectly balanced with the mild citrus glaze. Delicious. Serves 32 | Prep. time 15 minutes | Cooking time 20 minutes
Ingredients 1 egg 2 tablespoons butter cup packed brown sugar cup honey cup molasses 2 cups all-purpose flour 1 tablespoon cinnamon 1 teaspoon cloves teaspoon mace teaspoon coriander teaspoon ginger teaspoon nutmeg teaspoon cardamom teaspoon baking soda cup chopped almonds cup mixed candied fruits and peels, finely chopped For the glaze 1 egg white 1 cups icing sugar 1 tablespoon lemon juice Candied fruits and peels and/or nuts for decorating Directions
