Shumai
A popular dim sum meal made up of pork and mushrooms
Serve: 10
Time needed: 35 minutes
Ingredients:
- Ground pork: 115 g
- Shiitake mushrooms, chopped: 3
- Spring onion, chopped: 1
- Grated ginger: 1 tbsp.
- Soy sauce: 1 tbsp.
- Shaohsing rice wine: 1 tbsp.
- Sesame oil: 1 tbsp.
- Sea salt & pepper
- Corn flour: 2 tsp
- Dumpling wrappers: 10
- Goji berries: 15
- Vegetable oil: 1 tbsp.
Directions:
- Take a bowl and mix all the filling ingredients.
- Put some filling in the middle of the dumpling wrapper. Shape and seal wrapper into a ball shape.
- Heat oil in a bamboo steamer bottom and place parchment paper.
- Arrange dumplings in steamer, cover and cook for 8 minutes.
Baked Bao
Tasty bite sized treats popular in Cantonese cuisine.
Serve: 8
Time needed: 1 Hour 40 minutes
Ingredients:
- Plain flour: 500 g
- Yeast: 7 g
- Ground nut oil: 2 tbsp.
- Caster sugar: 2 tbsp.
- Warm water: 300 ml
- Sesame oil: 1 tbsp.
- Black bean paste: jar
- Goji berries: 16
Directions:
- Take a bowl and mix all the ingredients, except water and sesame oil.
- Now put half of the warm water into it and mix well to knead the dough.
- Knead for 5 minutes, then put in a bowl greased with sesame oil. Cover and set aside for 90 minutes.
- Then knead the dough again on a flat surface and have a ball size portion in your hand.
- Add some black bean paste and press and seal the dumplings into a ball shape.
- Place the balls in a steamer cooker and cover. Cook for 20 minutes.
- Top with goji berries.
Boiled Crab Wontons
This is another great variation in a wonton.
Serve: 8
Time needed: 45 minutes
Ingredients:
- Crab meat, 450 g
- Grated ginger: 1 tbsp.
- Chinese chives, chopped: 2 tbsp.
- Rice wine: 1 tbsp.
- Soy sauce: 1 tbsp.
- Sesame oil: 1 tsp
- Pepper
- Wonton wrappers: 36
- Egg, beaten: 1
- Corn flour
Directions:
- Take a bowl and mix all filling ingredients.
- Place a wonton wrapper in your hand and add some filling. Shape and seal into a ball shape.
- Take a cookie sheet and dust some corn flour on it. Place wontons on it and refrigerate for an hour.
- Boil water in a wok and simmer on low heat. Cook wontons for 5 minutes.
- Top with chives.
Spiced Beef Meatballs
Delicious Dim Sum meatballs that may be steamed or fried.
Serve: 8
Time needed: 25 minutes
Ingredients:
- Ground beef: 12 ounces
- Grated ginger: 1 tbsp.
- Chopped garlic: 4 cloves
- Chopped spring onion: 1
- Red chilies, chopped: 2
- Rice wine: 1 tbsp.
- Soy sauce: 1 tbsp.
- Corn flour: 1 tsp
- Sesame oil: 1 tsp
- Brown sugar: 1 tsp
- Sea salt and pepper
- Vegetable oil: 4 cups
- Baby spinach: 2 ounces
Directions:
- Take a bowl and mix beef with half of the chilies, ginger, garlic and spring onions.
- Stir in soy sauce, corn flour, rice wine, seasoning, oil, and sugar.
- Roll this mixture into a small sized ball.
- Take a skillet and heat oil over medium heat and deep fry balls.
- Serve by wrapping meat balls in baby spinach.
Rose Dumplings
This Dim Sum goes best for either breakfast or lunch.
Serve: 8
Time needed: 25 minutes
Ingredients
- Flour: 2 cups
- Egg: 1
- Roses: 8
- Carrot:
- Mushrooms: 2
- Diced wood ear: 1 piece
- Oyster sauce: 1 tbsp.
- Dry tofu: 1 cup
- Soy sauce: 1 tbsp.
- Olive oil: 1 tsp
- Ginger root: 1
Directions:
- Take a pot and mix lukewarm water with wood wear, tofu, and mushrooms. Let them soak.
- Take another bowl and mix flour and corn flour with water.
- Knead dough for 20 minutes, then add chop carrots and soaked ingredients.
- Beat eggs in a bowl and mix all these fillings in a single bowl.
- Make dumplings out of dough and shape these into a triangle. Leave a little hole in the middle to decorate with roses.
- Steam dumplings in boiling water steamer for 20 minutes.
Beef Ribs Dim Sum
Beef Short Ribs chopped and served in Dim Sum Portions
Serve: 4
Time needed: 12 hours 10 minutes
Ingredients
For marinade:
- Salt: tsp
- Baking soda: tsp
- Sugar: tsp
- Shaoxing wine: 1 tbsp.
- Soy sauce: 2 tsp
- Oyster sauce: 1 tsp
- Sesame oil: tsp
- Minced garlic: 1 clove
- Red onion, sliced: 1
Others
- Oil: 1 tsp
- Corn starch: 2 tsp
- Black pepper: tsp
Directions:
- Rinse beef ribs and marinade, which is made by mixing all marinade ingredients.
- Mix other remaining ingredients in a bowl and add ribs and onions. Coat well and refrigerate for a night.
