1. Seattle Hot Dogs

Ingredients:
- 2 tablespoons butter
- sweet onion, sliced thinly
- 2 hot dogs
- 2 ounces cream cheese
- 2 hot dog buns
- Brown mustard
Directions:
Preheat pan on med heat. Add in the butter, and melt, then add onions and cook for 10 minutes. In a skillet, add the cream cheese and heat.
Grill the hot dogs and buns until browned.
Spread the cheese on the bun, then add the hot dog, onions, and mustard.
Serve.
2. Spiced Baked Fish
Moist whole fish is covered with a spiced onion mixture giving you a delicious and cook dinner option that the family will love!
Makes: 4 servings
Prep: 5 mins
Cook: 30 mins
Ingredients:
- 2 lb. whole fish, scaled and cleaned
- 2 onions, sliced
- 4 cloves garlic, crushed
- 1 cup fresh parsley, chopped
- 1 cup fresh cilantro, chopped
- 1 tablespoons coriander powder
- - teaspoon chili powder
- 3 tablespoons lemon juice
- 3 tablespoons of oil
- Salt
- Pepper
- Chopped parsley and lemon wedges for garnish
Directions:
Preheat oven to 450F.
Heat oil in a pan and then add the fish and fry for 2 minutes on each side to crisp up the skin. Remove and place in a baking pan.
Add the onions to the pan and cook till soft.
Add in the rest of the ingredients and cook for a few more minutes.
Spread this onion mixture onto the fish and inside it.
Add a cup of water to the baking pan and bake in the oven for 20 minutes or until fish has cooked through.
Serve topped with fresh parsley and lemon wedges.
3. Shrimp Tacos with Tomatillo Black Bean Salsa
The tart, apple-flavored flesh of the tomatillo, punches up the light and refreshing salsa in this recipe.

Ingredients:
For the salsa:
- 2 cups diced tomatillo
- 1 cup cubed pineapple
- 1 cup canned black beans
- 1/2 small red onion, finely diced
- 1 jalapeo chili pepper, seeded and minced
- 2 cloves garlic, minced
- 1/2 cup chopped cilantro
- Juice of 1 lime
- 1/2 teaspoon ground cumin
- 1/4 teaspoon sea salt
For the tacos:
- 1/2 pound frozen and thawed cooked shrimp
- 8 (6 to 8-inch) corn or whole wheat tortillas
Directions:
For the salsa: In a bowl, mix the tomatillo, pineapple, black beans, onion, chili pepper, garlic, cilantro, lime juice, cumin, and salt together.
For the tacos: Divide the shrimp among the tortillas and top with the salsa.
And then, serve.
4. Asparagus and Fontina Frittata
A delicious frittata recipe with asparagus and cheese.
Makes: 6 servings
Prep: 10 mins
Cook: 15 mins
Ingredients:
- 6 eggs
- 1/2 tsp. salt
- 1 tablespoon of olive oil
- 2 tablespoons whipping cream
- 1 tablespoon butter
- 1 lb. asparagus, trimmed & cut into 1412" pieces
- 1 medium tomato, seeded, diced
- 1/4 teaspoon black pepper
- 3 ounces fontina cheese, diced
Directions:
Whisk together the above-mentioned eggs, cream, pepper, and salt together in a bowl and set aside until needed.
Heat a skillet over med heat, and then add the oil and the butter. Once melted, add asparagus and saut for about 3 minutes. Increase the heat to medium-high. Next, add the tomato and cook 2 minutes longer. Put the eggs mixture on top and cook until the eggs begin to set. Sprinkle with the cheese. Reduce to medium-low then cook for a few minutes.
Place the skillet under the broiler. Then, cook until the eggs are set, and the cheese is golden-brown on top about 5 minutes. Remove and let the frittata rest for 2 minutes. Slice as a pie and serve.
