Apple Pancake (Pfannkuchen)

Ingredients:
- 1 large tart-sweet apple, such as Cortland, peeled, cored, and thinly sliced
- Juice and grated zest of 1 large lemon
- 4 large eggs, separated
- cup whole milk
- 2 Tablespoons sugar
- 2 Tablespoons cornstarch
- teaspoon salt
- 2 tbsp unsalted butter
- Confectioners sugar, to garnish
Directions:
Preheat your oven to 400F. Heat a 10-inch cast-iron skillet over medium heat until hot, about 3 minutes.
In a bowl, combine the apple slices with 1 Tablespoon of the lemon juice and set aside. In a large bowl, beat together the egg yolks, sugar, milk, cornstarch, salt, & lemon zest. In a separate large bowl, whisk the egg whites into soft peaks. Using a flexible spatula, gently fold the yolks into the whites until just mixed.
Add the butter to the heated skillet. When the butter foams, add the apples, turning to coat them with butter, and then arrange them in a single layer. Pour the egg mixture evenly over the apples. Partially cover and cook for 10 minutes. Uncover the skillet, transfer it to the oven, and bake for about 15 minutes, or until the bottom of the pfannkuchen is nicely browned and it is set in the middle.
Remove, sprinkle with the confectioners sugar and remaining lemon juice, and serve immediately.
Farmers German Breakfast
This hearty dish is perfect for your breakfast, giving your body fuel for the day ahead. Its even easier to make than usual if you prepare the potatoes the previous night.

Ingredients:
- 14 cup of milk, whole
- 2 eggs, medium
- 1/3 tsp. of salt, kosher
- 1/8 tsp. of black pepper, ground
- 2 2/3 cooked diced potatoes, large
- 2/3 chopped onion, medium
- 2/3 tbsp. of butter, softened
- 4 slices of bacon, lean
Directions:
In medium fry pan, fry bacon until it is crispy. Remove from the pan and lay on paper towel to drain.
Pour the bacon grease from pan. Discard. Add the butter.
Saut the onion until it is soft. Add potatoes. Lightly brown.
Chop bacon.
In another bowl, whisk milk, salt, pepper and eggs together.
Pour the egg mixture over potatoes and onions. Add the bacon pieces.
Stir occasionally while cooking until the eggs have set. Combine all and serve hot.
Latkes Potato Pancakes
This is another of potato-centric German dishes. Its much easier to make if you use frozen hash browns.
Makes: 5 Servings

Ingredients:
For frying: vegetable oil
- 1/2 tsp. of paprika
- 1/2 minced onion
- 1/4 tsp. of baking powder
- 1 1/2 tsp. of flour, all-purpose
- 1 egg, large
- 1 1/2 pounds of potatoes
- 1/2 tsp. of salt, kosher
- 1/2 tsp. of pepper, ground
Directions:
Wash peel potatoes. Grate with food processor. Drain liquid off. Squeeze any excess liquid by hand.
Beat eggs. Mix with grated potatoes and remainder of ingredients, excluding oil.
Heat 1/2 an inch of the oil in large skillet on med. heat until quite hot.
Drop the potato mixture in oil using heaping tablespoons.
Flatten with pancake turner.
Fry until lightly browned on each side. Drain them on paper towels.
Serve with sour cream or applesauce as topping.

- 1/2 tsp. of sage
- 2 tsp. salt, kosher
- 1/2 tsp. of pepper, ground
Directions:
Combine all of the ingredients in bowl. Mix thoroughly.
Shape into two x 6 rolls. Wrap and refrigerate for six hours.
