Ingredients

For the Salade:

• 2 can chickpea (15.oz), drained and rinsed
• 1 medium cucumber, chopped
• 2 small tomatoes, chopped
• 1 bell pepper, chopped
• onion, sliced
• cup olives, chopped
• cup cheese, crumbled

For Vinaigrette:

• cup olive oil
• cup white-wine vinegar
• 2 teaspoon lemon juice
• tablespoon parsley/ mint, freshly chopped
• teaspoon red pepper flakes
• teaspoon rock salt
• - teaspoon ground black pepper

Instructions

For the salad:

1. Toss chickpeas, cucumber, bell pepper, onion, tomato and olive slices in a large bowl.

2. To it add cheese crumbles and stir-mix all.

For the vinaigrette:

1. In a closed jar, take olive oil.

2. To it add vinegar, lemon juice, parsley/mint, red pepper flakes, salt and ground pepper.

3. Shake and mix all well till emulsified

4. Dress the salad mixture with vinaigrette and serve.
