Chapter 1
Delicious Salads In A Jar
If you are like me, you probably have a busy lifestyle to keep up with which makes eating healthy pretty difficult. We all know that a good hearty salad is good for you. However, due to everyones busy demanding schedules, finding the time to prepare a good salad isn't always possible. Yes, you can get salad in many fast food restaurants; unfortunately, most fast food salads are either not fresh, contains processed fillers, or their dressing contains more calories than their burgers.
What most people don't know is that many fast food restaurants actually spray their salads with a substance made of propylene glycol to make their lettuce and other vegetables appear fresh, when they could actually be up to 3 days old! So all these reasons really defeat the purpose of trying to eat healthy. Lucky for you, I am about to reveal an ingenious way to prepare a tasty and healthy salad in a mason jar that can last for up to 7 days (without a chemical spray). The secret is knowing how to layer the ingredients properly.
Here are the 3 layers:
1. The Bottom layer is your salad dressing. You can use your favorite salad dressing or any of my 7 personal favorite healthy homemade salad dressings. 2.
The Middle layer will be your harder dense ingredients to separate your top and bottom ingredients. These include carrots, cucumbers, cherry tomatoes, mushrooms, broccoli, peas, oranges, beans, grains, and bell peppers. Do you want to add protein? Then add in cooked ham, steak, bacon or chicken in this layer. Hint: Keep the harder ingredients at the bottom or this layer (i.e carrots) since they dont absorb as much liquid. 3. The Top layer will be your leafy vegetables such as lettuce, spinach, arugula, kale, and/or mixed greens.
Keeping the liquid (salad dressing) separate from your leafy vegetables in the jar will allow you to preserve your healthy salad for 3-4 days and up to 7 days if it is vacuum sealed. Hint: Before you close the jar with the lid, place a folded paper towel on top of the salad. Make sure to leave enough room in the jar. The paper towel will help absorb excess moisture to keep the leafy vegetables from wilting. Screw on both parts of lid tightly and store in your refrigerator.

Crunchy Basil Salad
Bottom layer
3 tablespoons olive oil 3 teaspoons apple cider vinegar 2 teaspoons honey 2 teaspoons chopped fresh basil clove garlic Combine all ingredients in a small bowl and whisk it.

Chapter 3
Korean Sesame Salad
Bottom layer
1 tablespoon soy sauce 1 tsp grated ginger 1 tablespoon water 1 teaspoon of honey 1 tablespoon distilled white vinegar 2 teaspoons sesame oil 1 teaspoon red pepper flakes Combine all ingredients in a small bowl and whisk it. Then pour it in your mason jar.
Middle Layer:
Baby Carrots Onion Cucumber Sugar Snap Peas Orange Bell Pepper Cherry Tomatoes
Top Layer:
Lettuce Red Cabbage Instructions: Add all three layers starting with your homemade salad dressing at the bottom.
Shake and enjoy.
Chapter 4
Simple Sicilian Salad
Bottom layer
3 tablespoons extra virgin olive oil 2 tablespoons balsamic vinegar 1/2 teaspoon dried oregano Salt and pepper to taste Combine all ingredients in a small bowl and whisk it. Then pour it in your mason jar.
Middle Layer:
Olives Tomatoes Pepperoni Perline Mozzarella
Top Layer:
Baby Romaine Instructions: Add all three layers starting with your homemade salad dressing at the bottom. Shake and enjoy.
Chapter 5
Chinese Chop Salad
Bottom layer
6 teaspoons red wine vinegar 2 tablespoons extra-virgin olive oil 1/2 teaspoon hoisin sauce 1/2 teaspoon honey 1/4 teaspoon minced garlic Salt and ground black pepper to taste Combine all ingredients in a small bowl and whisk it.
Then pour it in your mason jar.
Middle Layer:
Shredded Carrots Bean Sprouts Green Onions Pear Cooked Chicken Slivered Almonds
Top Layer:
Kale Baby Spinach Instructions: Add all three layers starting with your homemade salad dressing at the bottom. Shake and enjoy.

Classic Italian Salad
Bottom layer
1 tablespoon apple cider vinegar 3 tablespoons olive oil 1/4 clove garlic, minced 1 teaspoon chopped fresh basil 1/4 teaspoon dried oregano 1/4 teaspoon of honey Combine all ingredients in a small bowl and whisk it. Then pour it in your mason jar.
