All too often, pounds seem to creep on slowly and mysteriously despite our best efforts. Its as if our body wants to gain fat. Count calories as precisely as wed like, the pounds keep coming. So we eat less, and less, and less, until finally we give up; convinced that something is wrong with us. Thats the bad news. The good news is nothing is wrong with you. Youve been given bad information. Its not the quantity of food we eat that causes the neurological, digestive, and hormonal dysregulation at the heart of chronic weight gain. Its all about the veggies
Eat your vegetables!! An oh-so-familiar phrase from so many childhoods. Turns out though, whoever scolded, cajoled, bribed, or schmoozed you into downing more of the plant matter on your plate, was right. You should eat your vegetables, because eating vegetables is good for you. Wait. Let me restate that a little more emphatically. Eating vegetables is absolutely brilliant for you ! Its true the single best thing we can do to improve our health is to eat an abundance of veggies. Its one of the few things that every doctor, lifestyle guru, diet plan advocate, fitness instructor, dietician, and even the government (!) agree on.
Vegetables are important. They are packed with fiber, water, carbohydrates, and theyre bursting with nutrients, but Ill hazard a guess that the reason youre holding this cookbook in your hands is not because you dont know the why, but because you want some more how. So Ill spare you the lecture on what veggies will do for you, and dive right into the how-to-ing, because deep down everyone knows that they need to eat more veggies.
I wasnt really surprised when I asked my lovely blog readers, and podcast listeners, and social media followers w hat they wanted in cookbook #3. There was an immediate and resounding chorus of, Help us eat more veggies!, and Make veggies delicious!. There were a few calls for a cookbook with nothing in it but grain-free, sugar-free cookies, and a smattering of others clamoring for truly healthy desserts, but the overwhelming majority just want to know how to cram {a lot} more veggies into their day.
