Southwestern Style Mini Tortilla Pizzas
Recipe Makes 24 servings. Ingredients: 6 6-inch corn tortillas diced green pepper diced red pepper 1 diced tomato 8 ounces green chilis 3 sliced scallions cup diced cilantro 1 cup nacho-style non-dairy cheese (recipe found here) Directions: Begin by pre heating your oven to 400 degrees Fahrenheit. Next, place each of the tortillas in one layer on two baking sheets.

Place the ingredients overtop the corn tortillas, placing the non-dairy cheese overtop last. Bake the tortillas for ten minutes. The cheese should begin to bubble. Slice the tortillas into four pieces, and serve them warm before a party. Enjoy!

Spinach Vegan Puff-Pastry Strudel

While this is happening, allow the potatoes to bake in either the microwave or in the oven at 400 degrees Fahrenheit. Make sure to plunge your fork into the potatoes to give them air holes. They usually cook in the oven for about forty minutes and in the microwave for about twenty. After theyre cooked but still a bit hard to the touch, place them in cold water. Next, preheat the oven to 400 degrees Fahrenheitif you didnt already to bake the potatoes. Afterwards, place the spinach, scallions, parsley, and dill together in a large skillet.

Allow the leaves to wilt on medium heat. After about a minute, drain out the greens and remove moisture. After the potatoes have cooled, peel them and slice them. Position a pastry sheet on a baking sheet and fold it out from itself. Scatter out the potato slices over the puff pastry, and cover the pastry with all the greens and tomatoes. Roll the pastry over itself to create the strudel-style, with an appropriate jelly-roll.

Make sure to tuck in the ends in order to keep the filling inside. Slash at the top of the strudel in even intervals to create about twelve different pieces. Repeat the above instructions with the rest of the ingredients and the second puff pastry. Allow the puff pastries to bake for twenty minutes. Cool them until theyre warm, and serve them. Enjoy!

Vegan Green Quesadillas
Recipe Makes 6 Servings.

Ingredients: 6 8-inch flour tortillas 3 minced scallions 1 diced avocado 1 cup grated non-dairy cheese Directions: Begin by spreading both tortillas out on a flat surface and dividing the grated cheese, the avocado, and the scallions overtop one half of each of the tortillas. Next, fold the tortillas evenly in half, and cook the quesadillas on a hot griddle. Make sure to flip the tortillas when the first side is golden. Flip them easily and carefully. In order to serve the quesadillas, slice them to make easy-to-take wedges, and serve warm.
