Introduction

Twenty-five years ago, my colleagues and I began our research about pyruvic acid compounds, or pyruvatenatural compounds that are always present in the body and diet. What we discovered amazed us, and we think it will amaze you. But first you must understand what pyruvate is.
What Is Pyruvate?
Pyruvate is a natural, three-carbon compound that is found in the body at all times (Figure 1).

It is a breakdown product of the six-carbon compound glucose. Glucose is a carbohydrate, one of the most common of the human body's fuels. In fact, carbohydrates are found in most of the foods we eat. The metabolism of glucose, a process called glycolysis, almost always produces pyruvate as well as energy to be used or stored (Figure 2).
Once pyruvate is formed, it goes to work immediately by entering the mitochondria, where it creates energy. The mitochondrion is a component of most living cells. The body makes energy in the mitochondria, primarily from the food we eat. Pyruvate is the main compound that can freely enter the mitochondria; any other compound is usually broken down into pyruvate before it can gain admittance to the mitochondria. Glucose, for example, usually will just sit outside the mitochondria's cellular walls, unable in its six-carbon form to feed the mitochondria's energy furnace. But when glucose is broken down into pyruvate, these walls no longer present a barrier.
