Food Safety 1994 is a comprehensive summary of the literature on food safety and foodborne illness published during the latter half of 1992 and the first half of 1993. Journals covered by the Life Sciences and Agriculture, Biology & Environmental Sciences editions of Current Contents were surveyed. Articles from more than 580 sources are included in this volume. Such comprehensive coverage would not have been possible without the extensive library resources and services of the University of WisconsinMadison.
We have included as broad a range of articles as we deemed possible. Some sections in Part I, DIET AND HEALTH, include primarily papers covering epidemiological, clinical, and intervention studies in humans and experimental studies with primates. The sheer volume of work on rodents precludes inclusion of any but a few of the more salient papers. Coverage of pesticides is limited for the same reasons. Because of the book's organization, individual food components (e.g., fiber or selenium) and particular diseases and disorders (e.g., cancer, birth defects) are likely to appear in more than one section. We attempt to present new information or insights gleaned from "methods" papers without providing details of the methods themselves, as readers interested in using the method would have to consult the original publication in any case.
While we have made every effort to assure accuracy, we encourage readers to consult the original publications for specific information.
Foodborne viruses are reviewed annually by Dr. Dean O. Cliver of the Food Research Institute. This information, presented in the Appendix, completes the subject matter coverage of the food safety literature.
