Introduction
Food and I have been through a lot together. Weve loved each other for as long as I can remember, but food hasnt always been a friend to me. Sometimes I couldnt get enough of it. It would comfort me, delight me. I could lose myself in food. Sometimes food was the cause of illness; often it was a source of guilt. As with all relationships, we had to change, evolvemature. Im proud to say that since Ive reexamined whats important, were stronger than ever. We make each other better.
Im not a nutritionist, a professional athlete, or a hundred-pound-weight-loss success story. I am a chef, a mother, and a food lover who wanted to remedy my relationship with food. I wanted to enjoy it without feeling sick and tired all the time. I was that person who would complain of health issues, weight issues, and mood issues and immediately follow those complaints with, But I eat healthy enough.
Was I eating healthy enough? Maybe for someone else, but as it turned out, not for me, even though I have always loved vegetables and have always cooked from scratch. Eventually, when I became serious about optimizing my diet, I went gluten-free, which led me to the Whole30, which converted me to Paleo, and finally I did the autoimmune protocol (AIP). I went through more than two years of elimination diets and self-experimentationhealing, moving, reading. Through research, trial and error, and troubleshooting, I found my way to keto.
It hasnt been easy learning the causes of inflammation in my body. Changing from overeater couch potato to health advocate, active go-getter, and self-employed mom. Finally learning the cause of my hidradenitis suppurativa and regaining control of my health. I had to fight tooth and nail for every inch of success.
