WHAT IS LOW CARB BREAD?
L ow carb bread is different from the normal wheat bread; it is meant for people on a low carb diet but still love to consume bread. It is made with ingredients like healthy fats, almond flour (or coconut flour), eggs, xanthan gum etc.
W HAT IS A BREAD MACHINE ? A bread machine is a multi-functional kitchen appliance or device that is built for bread baking. The device performs the function of mixing, kneading and baking. It comes with a bread pan with in-built paddles, located in the middle of a multi-function oven.
HOW DOES BREAD MACHINE WORK?
F amiliarize yourself with the machine.
Inspect all the machine components, the machine comes with a hinged lid, you can easily lift and shut. It comes with a control panel with various buttons. When you open the machine, you will find a bucket or pan, the bread pan function as a mixing bowl and a baking pan. Inside the center of the bread pan, you will find a kneading blade or bread paddle. The kneading blade functions to mix and knead the dough. Familiarize yourself with the machine settings.
Start by observing the display screen and buttons on the control panel. You will find on the select button the Start/Stop button, Timer and Crust Color. You will find several bread kneading and baking choices-Sweet, Whole Wheat, low carb, French, White or Basic, Rapid, & Dough. Know your bread pan capacity. A simple method to measure your bread pan capacity is by pouring water into the bucket using a cup measurement. Count how many cups of water it takes to fill up the bread bucket.
Less than 10 cups capacity will bake 1 pounds loaf of bread in the pan 10 cups capacity will bake 1-1/2 pound loaves of bread in the pan More than 12 cups or more capacity will bake 2 pound loaves of bread. This process is really important, so measure carefully. If you try and bake a 2 lb recipe in a 1 lb machine, it may come out a big mess. Before you add your ingredients into the bread machine pan, first, you remove the machine pan, insert the kneading paddle and add your ingredients according to machine instructions or your recipe instructions. Next, Place the pan in the bread machine, close the lid of the bread pan and set the program you wish through the machine panel. Afterwards, the kneading process starts, you will hear the sounds.
If you machine is the one that comes with a viewing window, you will be able to see the whole kneading process. This is the next phase that ushers in the rising phase. The machine will be quiet and allow the dough rise for some time during this rising phase. After which there will be a second phase of kneading and proving. The Final stage is the baking.
BREAD MACHINE CYCLES EXPLAINED
B asic cycle It has an average time of 3 hours to 4 hours, this setting is great for most savory yeast breads with most simple bread recipes, I use this setting for my baking most of the time.
Sweet This cycle is meant to prepare and bake sweet yeast breads with high sugar or fat content. This cycle requires lower baking temperature to prevent a burned crust. Choose this setting for recipes that call for cheese or eggs. Quick bread or cake cycle This cycle is for bread that does not require yeast, simple cake recipes or quick bread mixes. The baking time varies from machine to machine. Whole wheat cycle This setting requires longer time for dough to knead and rise.
Choose this setting for recipes that include cereal, or whole-grain flours, you can make good texture whole wheat/grain loaves with this setting.. Raisin/nut cycle Some bread machine comes with Raisin/nut cycle; this setting allows you to add dried fruits or nuts in the kneading process at an audibly signal, such as a beep, just in time to incorporate lightly with the dough.
F rench cycle French breads setting takes longer time to rise on most machines and a slightly higher baking temperature because they have little or no sugar. This cycle can help you attain the crust and texture that are similar to that of Italian and French breads. I mostly use this cycle for breads that have little or no sugar or fat.
R apid cycle This is a bread machine setting for bread in a rush.
The cycle can run for 30 minutes to 2 hours, it varies from machine to machine. Dough cycle This is a bread machine setting that allows you to withdraw the dough before baking commences, you can shape dough in flatbreads, pizza crusts, rolls, breadsticks or add your fillings. These breads are finished off in conventional oven. Jam cycle The jam cycle is perfect for making simple homemade fruit spread. The bread machine is turned into a veritable saucepan; it takes care of the mixing and cooking for 1 to 1 1/2 hours. Delay cycle This setting allows you program the machine to complete the cycle up to 24 hours later after you have added the ingredients.
