Dear Precious,
When I think of the years I wasted learning to cook meals out of heavy pots and pans with that needy stovetop, I feel as if Ive been duped into cooking harder, not smarter. Of course, preparing meals hasnt always been tedious. For the past 15 years, Ive had your cousin, stovetop pressure cooker, to rock my world and chatter on about the golden days when Memaw cooked with her pressure cooker. We created many meals until you, my precious iPot, came along.
Ill never forget the time I spent stalking you online. I read what others said about you, about your many functions and how fast you could be shipped. I watched how other cooks used you in videos, mostly for pressure cooking. I see now they werent using you to your full potential. Then the day came when I watched how you made yogurt and I knew I had to have you in my life.
I couldnt stand the thought of others having you while I stood in a kitchen surrounded by appliances that could only do one task. The slow cooker could only slow cook. The stovetop pressure cooker could only pressure cook. The rice maker could only make rice. The yogurt maker could only make yogurt. The stovetop could only boil and saut. I would trade them all to have you. Thankfully, my birthday was coming up and I knew hubby would ask me what I wanted. Oh the day I took you into my arms, Ill never forget the way you looked with all your cute buttons and your solid body. BABY! I couldnt wait to turn you on.
I have a confession to make. After we cooked our first recipe together, I didnt feel like a real cook. All you needed from me was ingredients, to lock on your lid, and push one of your buttons. ONE BUTTON? Really? You didnt need me after that. I was free to go and do my own thing. You took care of the cooking and keeping the food hot until I was ready. I seriously contemplated whether I had actually cooked. Some foodies would say hitting a button on the microwave was not cooking. How was that any different with you? I wondered if the other foodies would respect me as a real cook if we were seen together. Please forgive my silliness.
Weve been together a year this August 2015. Happy Anniversary, Darling! I love telling everyone about you and the great meals we cook together. You have brought such happiness to my family and have made it possible for us to do more with our time. Im obsessed with you and I think about you everyday. I love making videos about you, showing off your wonderful functions, and how youve made cooking plant-based meals more fun. Youre such a treasure and my secret weapon against stressful meal planning. Im so glad you were born into existence.

If you have not done so already, you MUST READ the Instant Pot Users Manual. The best way to ensure a long and happy relationship with your Instant Pot is to read that manual. Trust me on this one. Also some of the most frequently asked questions from new Instant Pot owners and old Instant Pot owners can be answered from the users manual.
Now repeat after me.
I have read the Instant Pot Users Manual and found the cooking charts in the recipe booklet that came with my Instant Pot. I will keep them, along with Jills O M Gee Good! Instant Pot Meals, Plant-based, Oil-Free cookbook, with my other worthy cookbooks. I too need the Instant Pot in my life. Because I like to Rock-and-Roll all night and party every day, my rockstar life leaves me little time to cook healthy meals. Jill, you are awesome. You crack me up and I am or will become a devoted subscriber to your YouTube channels.

First let me say, I am not the kind of cook who likes using hard-to-find overpriced ingredients in my cooking. Typically, I say If I cant get it from the grocery store down the street, I dont need it in the first place. Most of the time, this standard of shopping works me. However, there are three food items I enjoy so much I find them worth hunting down.
Better Than Bouillon
Its a broth base used for making broth. One teaspoon base mixed with one cup of water and SHAZAM, you have one cup of broth. The brand can be found in most all grocery stores. However, their vegan broth bases, No-Chicken base and No-Beef base are trickier to find but worth searching out. I have ordered them online from Vitacost.com but had to make a large order to score free shipping. In my offline foodie explorations, Ive learned that not all foodie mart chains carry the same choices. I advise you to ask your favorite grocer who already carries Better Than Bouillon to order the No-Chicken and No-Beef bases for you. The brand also carries a Mushroom base, but be warned, it has whey in it.
