1) Japanese Chicken and Egg Rice Bowl

This is a traditional Japanese dish that is packed full of a hearty chicken, smothered in a delicious Japanese broth and topped off with an egg, making a hearty meal that the entire family will love.

Ingredient List:
- 2 cups of jasmine rice, uncooked
- 4 cups of water
- 4 chicken breasts, boneless, skinless and cut into small pieces
- 1 onion, thinly sliced
- 2 cups of dashi stock
- cup of soy sauce
- 3 tablespoons of mirin
- 3 tablespoons of light brown sugar
- 4 eggs

Instructions:
1. Rinse the rice under running water until the water begins to run clear. Transfer to a large saucepan set over high heat and add in four cups of water. Bring to a boil. Once it comes to a boil reduce the heat to low or medium. Cover and simmer for 20 to 25 minutes or until soft.
2. While the rice is cooking place a large skillet over medium heat. Add in the chicken and cook for 5 to 10 minutes or until browned.
3. Add in the onion and continue to cook for 5 minutes or until soft.
4. Pour in the dashi stock, soy sauce, mirin and light brown sugar. Stir well to mix until the sugar dissolves.
5. Bring the mixture to a boil and allow to cook for 10 minutes or until reduced.
6. In a small bowl add in the eggs. Whisk until beaten. Pour this mixture over the chicken mixture. Stir well to mix. Cover and reduce the heat to low. Steam for 5 minutes or until the egg is cooked. Remove the mixture from heat.
7. Add one cup of the cooked rice into 4 serving bowls. Top off each bowl with of the chicken mixture. Spoon half of a cup of the soup over the top. Serve.
2) Japanese Beef Croquettes

This delicious Japanese dish is made using the perfect combination of mashed potatoes, beef and onions, to make beef patties that nobody will want to resist.

Preparation Time: 30 Minutes
Ingredient List:
- 3 russet potatoes, peeled and chopped
- 1 tablespoon of butter
- 1 tablespoon of vegetable oil
- 3 onions, chopped
- pound of ground and lean beef
- 4 teaspoons of soy sauce
- All-purpose flour, for dusting
- 2 eggs, large and beaten
- Panko breadcrumbs, for coating
- cup of vegetable oil, for frying

Instructions:
1. Place a large pot filled with water over the medium heat. Season with a dash of salt and bring the water to a boil. Add in the potatoes and cook for 15 minutes or until soft. Drain the potatoes and place into a large bowl.
2. In this bowl add in the butter and mash thoroughly until smooth.
3. Place a large skillet over the medium heat. Add in the vegetable oil. Once hot add in the onions and cook for 5 minutes or until soft.
4. Add in the ground beef and soy sauce. Continue to cook for 5 minutes or until the liquid has been evaporated. Remove from heat and pour this mixture into the bowl with the mashed potatoes.
5. In a separate skillet placed over medium to high heat, add in cup of the vegetable oil.
6. Shape the mashed potato and beef mixture into 10 balls. Flatten to form patties.
7. Roll the patties in the flour then dip into the egg. Roll in the breadcrumbs until coated on both sides.
8. Add into the skillet with the oil. Fry for 5 minutes on each side or until golden in color. Remove and drain on a plate lined with paper towels to drain. Serve.
3) Traditional Yakisoba

This traditional Japanese dish is made with fresh cabbage, carrots, broccoli and seaweed flakes, making it perfect for those who are looking to increase the daily vegetable intake.
Yield: 2 Servings
Preparation Time: 15 Minutes
Ingredient List:
- 2 tablespoons of extra virgin olive oil
- bunch of cabbage, fresh and shredded
- 3 carrots, fresh and cut julienne style
- 4 spring onions, sliced
- 1 cup of broccoli, fresh and cut into florets
- Soba noodles, for serving
- 6 tablespoons of yakisoba sauce
- Bonito flakes, for garnish
- Aonori seaweed, for garnish

Instructions:
1. Place a large wok over medium to high heat. Add in the noodles and cook according to the directions on the package. Remove from the wok and set aside.
2. Using the same wok add in two tablespoons of the extra virgin olive oil. Once the oil is hot enough add in the shredded cabbage, julienne carrots, sliced spring onions and broccoli florets. Stir well to mix and cook for 5 minutes.
